As a Wine Specialist, you’re not just preparing and serving drinks – you’re spreading the light and warmth of hospitality by delivering memorable experiences that make the stay for every guest.

This position is concerned with beverage & bar operations such as:
• Processes Beverage orders from guests
• Mixes cocktails and drinks
• Bar Mis-en-place
• Bar & Beverage inventory & ordering

Here’s what you’ll do during a typical day:

  • Delight our guests: Bring an upbeat and friendly attitude to all guest interactions and proactively look for ways to make their experience special
  • Prepare and serve beverages: Mix, garnish, and serve drinks according to recipe standards, ensuring accuracy and satisfaction
  • Maintain bar operations: Stock and organize bar supplies, including beverages, glassware, and perishables, for seamless service
  • Process payments efficiently and accurately: Use the point-of-sale system to correctly handle cash, credit/debit cards, gift certificates, and vouchers
  • Monitor product quality: Manage inventory and ensure the freshness and quality of all beverage-related items
  • Address guest concerns professionally: Manage situations involving intoxicated guests with care and respect, ensuring a safe environment
  • Comply with regulatory standards: Maintain compliance with health, safety, sanitation, and alcohol awareness regulations, ensuring the highest standards of guest and team member well-being

As a Wine Specialist fulfills responsibilities to the highest professional standards and demonstrates strong upselling and salesmanship abilities. Excellent phone manners, etiquette, and product expertise are displayed. Demonstrates a collaborative mindset towards their peers. Interacts with guests, relays feedback from them to the Outlet Manager and makes sure that the highest standard of service is always maintained.

Food and Beverage Operations

  • Ensures that all mise - en place is correctly prepared prior to commencing service.
  • Run the wine management and selling plan for the outlet assigned
  • Presents the wine list within the time parameters set by the resort.
  • Demonstrates excellent product knowledge of all food and beverage offered by the resort.
  • Ensures that requisitions are placed according to the resturants/bar’s requirements and wastage is minimized and controlled by documentation as per the sops of the resort.
  • At all times, acts in a responsible manner, especially in regard to the sale of alcoholic beverages.
  • Maintains and creates a working environment that reflects a sense of place.
  • Ensures that all tasks assigned, are completed, in a timely fashion.
  • Ensure the least breakage of glasses by working in a professional manner.
  • Attends and participates allocated team events.
  • Must participate in required training related to the job.
  • To be conscious and responsible regarding energy and water conservation.
  • Reports incidents of breakages, equipment repair and maintenance to Team Leader / Supervisor
  • Maintains highest levels of personal hygiene at all times.
  • To be fully aware about all health and safety, fire and emergency procedures.
  • Apply and adhere to rules and regulations as per employee handbook, departmental and resort policies and procedures, including those for the emergency situations
  • Handles any guest’s complaint in a professional manner, as per resort’s Policy & Procedure (service recovery).
  • Practices proper telephone etiquette with colleagues and resort’s guests.
  • Ensures all activities are carried out honestly, ethically and within the parameters of the Maldivian Law
  • To check, read and understand restaurant diary or communication booklet, ensuring all information is well aware before commencing a shift.
  • Review the guest preferences, prior to approach guest tables, if recorded, as promised to our customers.
  • Use the upselling techniques at suitable timing, in order to increase the hotel revenue, to achieve the annual goals.
  • Greet our customer with the unique one & only greeting techniques and greeting standard.
  • To double check the guest checks / bill before presenting to the customer, ensuring no discrepancies through correct billing
  • To ensure acknowledge and greet guest with good eye contact, energetic and professional manner.
  • Performs any additional or special duties, as directed by a superior.

  • To keep up-to-date with the Stay Score Experience results and to seek to positively influence these results by following the CONRAD Brand Standards.

  • To maintain a high standard of personal appearance and hygiene at all times by adhering to the Conrad Maldives Rangali Island Grooming Standards.
  • To have a complete understanding of and adhere to the resort’s policy relating to fire, hygiene, health and safety.
  • To takes direction from and carry out any requests by management in conjunction with work.
  • To provide guests with friendly, efficient, accurate and polite service at all times.

People

  • To maintain high team focus by showing co-operation and support to colleagues in the pursuit of team goals.
  • To contribute ideas and suggestions to enhance operational/environmental procedures in the Resort.
  • To actively promote the services and facilities of the Conrad Maldives Rangali Island and the Conrad Hotels and Resorts to guests and suppliers of the Resort.
  • To perform all duties and responsibilities in a manner that ensures your safety and that of others in your workplace.

In addition, this role requires the following minimum qualifications:

  • 1–2 years of bartending or related F&B experience
  • WSET or equivalent degree, level 2 or above from a recognized Sommelier program or equal experience from a recognized leading hotel of equal standard.
  • Strong mixology skills and knowledge of alcoholic beverages
  • Excellent customer service and communication abilities
  • Attention to detail and time management, especially during peak hours
  • Familiarity with health, safety, and responsible alcohol service standards
  • Fluent in written and spoken English, other languages a distinctive advantage
  • Computer literate
