What you will have an opportunity to do:
The Restaurant Manager is responsible for the day-to-day leadership and operation of Vicolo, ensuring exceptional guest experiences, consistent service execution, team development, and operational excellence. Reporting directly to the Restaurant General Manager, this position oversees daily front-of-house operations and serves as the primary manager on duty during assigned shifts.
The Restaurant Manager works closely with culinary leadership to deliver an elevated dining experience while maintaining the highest standards of hospitality, cleanliness, efficiency, and profitability.
· Lead daily service periods and ensure exceptional guest experiences at all times.
· Maintain Vicolo's service standards through active floor presence and engagement.
· Anticipate guest needs and resolve concerns promptly and professionally.
· Build relationships with resort guests, local patrons, and repeat customers.
· Monitor dining room flow, reservations, seating strategies, and table management.
· Ensure consistency in service delivery, food presentation, and overall dining experience.
· Oversee daily restaurant operations including dining room, bar, private dining, and outdoor seating areas.
· Ensure proper opening, shift transition, and closing procedures are followed.
· Maintain cleanliness, organization, and appearance standards throughout the restaurant.
· Monitor compliance with health, sanitation, safety, and alcohol service regulations.
· Ensure all operating procedures and service standards are consistently executed.
· Partner with culinary leadership to coordinate service flow and guest satisfaction.
· Supervise and support servers, bartenders, hosts, support staff, and supervisors.
· Conduct pre-shift meetings and daily lineups.
· Train, coach, and mentor team members on hospitality standards, product knowledge, and service techniques.
· Provide real-time feedback and performance coaching.
· Assist with recruiting, interviewing, onboarding, and training new team members.
· Foster a culture of teamwork, accountability, and guest-focused service.
Financial & Administrative Responsibilities
· Support achievement of revenue, labor, and profitability goals.
· Monitor daily sales performance and labor productivity.
· Assist in creating staffing schedules based on business levels.
· Ensure accurate cash handling and POS procedures.
· Monitor beverage and operating supply usage.
· Assist with inventory management and cost-control initiatives.
· Support the execution of promotional events, wine dinners, and seasonal programming.
· Promote beverage, wine, and specialty cocktail sales through staff education and guest engagement.
· Support beverage inventory controls and ordering procedures.
· Ensure responsible alcohol service standards are maintained.
· Collaborate with beverage leadership on menu rollouts and training initiatives.
· Utilize Hilton-approved systems and restaurant technology platforms to support operations.
· Ensure proper use of POS systems, reservation systems, labor management tools, and guest service applications.
· Review guest feedback platforms and assist in implementing service improvements.
· Maintain accurate operational records and reporting requirements.
What are we looking for?
· Minimum 3 years of restaurant management experience in an upscale or luxury dining environment.
· Resort, hotel, or high-volume destination restaurant experience preferred.
· Strong understanding of food, beverage, wine, and hospitality operations.
· Strong leadership and team-building abilities.
