Job Description

Our client, a prestigious international restaurant specialising in Asian-inspired cuisine, is seeking a talented and experienced Sushi Chef to join its culinary team in St. Julian's, Malta.

The successful candidate will be responsible for preparing high-quality sushi, sashimi, and other Japanese-inspired dishes while maintaining exceptional standards of presentation, freshness, and food safety.

Key Responsibilities

• Prepare and present a variety of sushi, sashimi, nigiri, maki rolls, and other Japanese specialities.
• Ensure consistency in food quality, taste, presentation, and portion sizes.
• Select, handle, and prepare fresh fish, seafood, and other ingredients according to established standards.
• Maintain excellent standards of hygiene, food safety, and cleanliness in the sushi preparation area.
• Monitor ingredient freshness, stock levels, and proper storage procedures.
• Assist with menu development, seasonal specials, and creative sushi presentations.
• Ensure efficient preparation and timely service during busy restaurant operations.
• Work closely with the Head Chef and kitchen team to maintain high culinary standards.
• Minimise food waste and support effective stock management.
• Ensure compliance with HACCP procedures and food safety regulations.

Requirements



• Only candidates currently residing in Malta will be considered for this position.
• Previous experience as a Sushi Chef in a reputable restaurant or high-end dining establishment.
• Strong knowledge of Japanese cuisine, sushi preparation techniques, and seafood handling.
• Excellent knife skills and attention to detail.
• Ability to prepare sushi and sashimi to consistently high standards.
• Good understanding of food hygiene, HACCP, and safe food handling procedures.
• Creativity and passion for Japanese and Asian-inspired cuisine.
• Ability to work efficiently under pressure in a fast-paced kitchen.
• Strong teamwork, organisational, and communication skills.
• Good command of English.
• Flexibility to work evenings, weekends, and public holidays.
