SCOPE 范围

Be responsible for cleaning of pantry and dishes, and striving to improve the satisfaction of customers and colleagues while effectively controlling operating costs.
负责配菜间与餐具的清洗及保洁,在有效控制运营成本的同时要力求不断提高客人与同事的满意程度。

PRINCIPAL RESPONSIBILITIES 主要职责

  • Take directly responsibility for sanitation of all culinary, storage garbage and food areas.

直接负责厨房卫生设施,垃圾存储和食品区域。

  • Supervise and manage the operation of the bowl and dish storage and ensure consistent with relevant policies, standards and procedures.
    监督管理盘碟存放间的操作并确保与相关政策、标准、程序相一致。
  • Properly operated and the proper temperature is maintained for all foods.

适当操作并对食品保持适当温度(酒精热源或其它加热)。

  • Assist in the inspection of food holding procedures and transportation equipment maintenance procedures.

协助检查食品持有程序和运输设备维修保养程序。

  • Ensure food operation and hygiene standards comply with specifications.

确保食品操作及卫生标准符合规范。

  • Ensure all equipment, porcelain, glass and silver are clean at all times.

确保设备,瓷器,玻璃器皿,镀银器皿都是清洁的。

  • Familiar with and strictly implement service utensils, equipment, floor and other cleaning procedures.

熟知并严格正确执行所有服务器皿,设备,地板等清洁程序。

  • Participate in regular inventory checking.

参与定期盘点工作。

  • Ensure clean standards comply with hotel brand standards.

确保清洁标准符合酒店品牌标准。

  • Know and implement Hygiene and Safety Standards.

  • Attend departmental daily training.

参加部门每日培训。

  • Actively promote cross-sectoral cooperation through frank communication.

  • Strictly enforce any reasonable requirements of the management without violating the laws and regulations.

  • Ensure the timely completion of seasonal sales products for the hotel, including but not limited to New Year gift boxes, rice dumplings, and mooncakes.

  • Comply with attendance policies and follow management's shift arrangements regarding overtime work and leave.

  • 100% Complete hotel and job-related training courses.

  • Employees are obligated to assist the hotel in selling seasonal products.

REQUIREMENTS 职位要求

Education 教育学历

  • Culinary or related professional area is preferred.

餐饮相关背景优先。

Experience 经验

  • At least one year working experience in this position, preferably in hotel industry.

至少一年相关工作经验,有在酒店工作经验的优先。

Job Skill/Knowledge 工作技能知识

  • Knowledge of food handling and sanitation standards.

具备处理食物和环境卫生标准的知识。

  • Knowledge of basic sanitation controls and purpose and use of cleaning supplies.

具备基本卫生设备控制和使用清洁设备。

  • Understanding of use and maintenance of kitchen dish room equipment.

理解如何使用厨房,盘碟设备。

  • Strong colleague relation skills.

良好的调节同事关系能力。

Language Proficiency 语言能力

  • Good communication skill in Mandarin.
