Harrah’s Cherokee Casino Resort Position Description
POSITION TITLE: Steward
DEPARTMENT: Banquet, Employee Cafeteria, Selu Garden Cafe, The Smokehouse Coop, Gordon Ramsay, Guy Fieri, Room Service Cherokee Tower, Italian
GRADE/FLSA STATUS: H6—Non-Exempt
BADGE TYPE/COLOR: Work Permit—Peach
REPORTS TO: Steward Supervisor, DR Senior Steward

The primary function of the Steward position is to clean and sanitize all dishes and silverware used by guests. Maintain all kitchen equipment and environment according to health department code. Keep banquet areas clean and sanitized.
JOB ESSENTIAL DUTIES AND RESPONSIBILITIES:

Prepare tableware for washing, i.e. scrapes plates, pre-soak silverware, places all items to be washed in their proper dishwasher rack

Set up dishwashing machine, i.e. drains closed, tanks filled, temperatures at correct level, detergent at proper level

Wash, stack and store china in appropriate kitchen area

Clean dishwashing equipment and working areas

Collect all soiled pots, washes and restacks cleaned pots on shelves

Responsible for all removal of garbage and refuse

Mop and sweep floors

Wash walls and ceiling tiles

Sanitize all cooking equipment

Assist in maintaining necessary inventories of kitchen cleaning products and equipment

Maintain all areas for a safe clean environment based on Health Department and internal standards

Assist others when needed

Acknowledge and respond to customers immediately

Answer questions about Harrah’s facilities and services

Maintain cleanliness and organization of all kitchen areas and equipment

Responsible for the overall cleanliness of the dining areas, recycling room and dumpster area

Responsible for the sorting of recyclables

Adheres to regulatory, departmental, and company policies/procedures in an ethical manner

Endorse the business objectives, ethics and values of Caesars Entertainment in accordance with the Code of Commitment and Mission, Vision and Values
MINIMUM QUALIFICATIONS:

High school diploma or GED preferred

Must demonstrate the following essential knowledge and skills:

Knowledge of sanitation standards and procedures

Neat, professional appearance with excellent personal hygiene

Must have speed and accuracy in order to maintain maximum efficiency

Excellent interpersonal skills

Knowledge of dish machine maintenance and chemical safety

Able to attend to multiple priorities simultaneously

Team player
PHYSICAL, MENTAL, AND ENVIRONMENTAL DEMANDS:

Must be physically mobile with reasonable accommodations

Must be able to respond to visual and aural cues

Must be able to read, write, speak, and understand English

Must be able to handle high stress in the work environment and turn stress into high energy

Must be able to tolerate areas with high temperatures near dish machine and extreme cold temperatures in coolers and freezers

Must be able to use the chemicals for cleaning and sanitizing all kitchen areas

Must be able to operate the dish machine

Must be able to attend to multiple priorities simultaneously

Must be able to be on feet for 8 hour shift

Must be able to stoop, bend, reach, kneel, crouch, push, pull twist and grasp items while performing kitchen duties

Must be able to lift and carry 50 pounds and be able to push an pull up to 300 pounds in a cart

Must be able to tolerate area containing varying noise and temperature levels, illumination, vibration, crowds and air quality including second hand smoke

Must be able to work a flexible schedule including weekends, evenings and holidays
