Job Description
This person works as a team to provide food service that is safe, accurate, timely and responsive to the customer and patient’s needs. Food service includes stocking, assembling, and serving portion controlled hot and cold food, replenishing and stocking stations, and general sanitation duties. This person may work in one of the following areas within Nutrition & Food Services. Retail Food Service includes serving, cashiering, bussing, and barista duties. Patient Food Services includes assembly and delivery of patient meal trays. This position may be responsible for responsible for cash, credit card and debit card transactions. This person maintains cleanliness and sanitation of the foodservice areas and equipment. This position is responsible for providing excellent customer, patient, and staff interactions and is looked upon as the ambassador for the department of Nutrition and Food Services.
REPORTING RELATIONSHIPS
This person reports to the Supervisor, Food Services. This position does not oversee any employees. This position will take direction from Food Services Leads, Principal Food Service Workers in the Diet Office, DTRs, and Dietitians.

- Smile, greets, and offers assistance to patients, customers, and staff.
- Knows the menu being served.
- Understands and provides accurate information to inquiries.

General Safety and Sanitation
- Follows proper hand washing procedures and glove use while handing ready to eat food and performing other duties.
- Prevents cross contamination of foods while assembling and serving food.
- Takes order and serves food using portion control and presentation standards.
- Uses correct equipment and procedures to maintain service temperature of foods.
- Uses correct equipment and procedures to perform sanitation duties.
- Proper use of ppe when working with chemicals per manufacturer instruction.
- Labels and dates food items following FIFO procedures.
- Clean and sanitizes work surfaces, work areas, and equipment.
- Clean, organize, and restocks food and dishware items in food racks, service stations, refrigerators, display cases, serving line, and storage areas in a timely manner.
- Assists in dishroom and potroom as needed.
- Sorts trash, recycling, and compost accurately.
- Performs required documentation for duties assigned.
- Utilizes all necessary IT applications to perform job duties.

Retail Food Service and Barista
Patient Food Service
- Accurately assembles trays for patients per tray tickets following standards.
- Maintains efficiency and timeliness of tray assembly standards.
- Set up trayline stations, brew coffee, prepare beverages, prepare patient nourishments, assemble and replenish food for tray assembly following standards.
- Checks patient trays for accuracy and presentation in presence of TIM Clerk.
- Loads trays on the meal carts and utilizes TUGS and dumbwaiter systems to dispatch the trays in presence of TIM clerk.
- Delivers and picks up trays and formulas for patient and guest meals from their rooms per sequencing and dispatch from TIM Clerk.
- Follows tray delivery standards including two patient identifier confirmation.
- Maintains efficiency and timeliness of tray delivery standard of 45 minutes and scans trays accordingly.
- Maintains pantry and family lounge stock and sanitation.
- Passes menus to patients and assists patients with meal ordering, referring to DTRs as needed.
- Follows appropriate isolation precaution and insulin patient procedures.
- Collects credit card payment from guests following UCSF credit handling standards.

REQUIRED QUALIFICATIONS
- High School diploma or equivalent
- A minimum of 2 years of customer facing experience within the food service, hospitality or retail industries.
- Read, write, follow written or oral instructions and be understood in English.
- Basic computer skills.
- This position requires flexibility to orient and work at all UCSF Medical Center locations.
- Ability to meet physical demands involved with job duties as outlined below.
PREFERRED QUALIFICATION
- Two years of college or equivalent.
- State of California Food Handler certification or Servsafe certification.
