The Venue
Totti’s sits proudly within the iconic Lorne Hotel, a destination that has stood on the Great Ocean Road for over 145 years. Overlooking the sweeping views of Loutit Bay, the Lorne Hotel is a true coastal landmark - combining relaxed pub hospitality, boutique accommodation and memorable dining experiences in one of Australia’s most beautiful seaside towns.
Within the precinct sits Totti’s Lorne, a vibrant trattoria-style restaurant offering simple, produce-driven Italian cooking. Under the guidance of Executive Chefs Mike Eggert and Matt Germanchis, the menu celebrates the joy of sharing - from house-made antipasti and wood-fired bread baked to order, to handmade pastas and dishes cooked over the Josper charcoal oven.
Guests settle into the bright, coastal dining room and are transported to the Italian coast, enjoying dishes such as lobster pasta, wood-grilled King George whiting and Apollo Bay calamari, alongside Totti’s classics like antipasti, handmade pasta and tiramisu.
The Role
We’re looking for a passionate Sous Chef to help lead the kitchen team at Totti’s Lorne. Working closely with the Head Chef, you’ll play a key role in driving service standards, mentoring the brigade and ensuring every dish reflects the quality and consistency the venue is known for.
You thrive in a busy kitchen, lead from the front during service and take pride in developing the chefs around you.
