The Role

We’re seeking an experienced Sous Chef to join our kitchen team at Discovery Resorts – Kings Canyon, one of Australia’s most iconic outback destinations.

As Sous Chef, you’ll support the Head Chef in leading daily kitchen operations while mentoring the team and maintaining high culinary standards. You’ll play a key role in delivering quality dining across à la carte service, buffet offerings and special dining experiences — all while working in a truly unique location.

Key Responsibilities

  • Support the Head Chef with day-to-day kitchen operations, rostering and ordering
  • Lead, train and mentor kitchen staff
  • Prepare and present high-quality dishes with consistency and attention to detail
  • Maintain HACCP and food safety compliance
  • Manage stock control, waste and cost efficiency
  • Work closely with front-of-house teams to ensure smooth service

About You

To succeed in this role, you will bring:

  • Proven experience as a Sous Chef or strong senior chef leadership experience
  • Trade qualifications in commercial cookery
  • Solid menu planning and cost control knowledge
  • A passion for food and guest experience
  • Strong leadership and team development skills
  • Ability to perform in a fast-paced environment
  • Commitment to food safety and hygiene standards
  • A current driver’s licence (desirable)

This role involves manual handling including lifting up to 20kg, kneeling, squatting and use of kitchen chemicals and machinery.
