Job Description

Crystalbrook Bailey is modern, creative and quietly confident - a hotel with a deep appreciation for art, design and individuality.

Choosing the path less travelled, Crystalbrook Bailey celebrates originality, thoughtful detail and a genuine connection to local culture. This is the kind of place that feels just as at home exploring a gallery, wandering through a local farmers market or discovering something beautifully unexpected.

With a personality shaped by creativity and curiosity, Crystalbrook Bailey offers a distinctive guest experience where contemporary style, considered hospitality and artistic spirit come together.

The Opportunity:

Bring your culinary creativity and leadership to Pachamama at Crystalbrook Bailey, our Latin-inspired open-air bar in the heart of Cairns. With bold flavours, colourful share plates and tropical rooftop evenings, this is a Sous Chef opportunity for someone who enjoys creating food with personality and bringing out the best in their team.

Working closely with the Chef de Cuisine and Executive Chef, you will lead daily kitchen preparation and service, maintaining consistently high standards of flavour, presentation and quality. You will contribute ideas to menu development, explore ingredients and techniques that reflect Pachamama’s character, and collaborate with our Food & Beverage team to deliver memorable dining experiences.

Your leadership will be hands-on, providing clear direction during service and practical coaching to help your chefs develop. You will also oversee ordering, stock control and food costs, maintain food safety and hygiene standards, and support our commitment to Responsible Luxury through thoughtful use of ingredients and minimising waste.

This opportunity is offered on a full-time, permanent basis.

The Talent:

You take pride in your craft and understand how much a kitchen’s success depends on its people. You communicate clearly, stay composed during busy services and lead by example.

You will bring:

• Experience as a Sous Chef, or as an established Junior Sous Chef ready to progress
• A strong culinary background in a quality hotel or restaurant environment
• Creativity and an interest in exploring Latin-inspired flavours and shared dining
• Confidence coordinating kitchen operations, solving problems and maintaining standards under pressure
• Experience coaching chefs and building a supportive, productive team
• Sound knowledge of food costs, stock control, food safety and workplace health and safety
• A Certificate III or IV in Commercial Cookery, or equivalent
• Availability to work a rotating roster, including evenings, weekends and public holidays

Why Us:

You will work alongside exceptional people in a supportive, collaborative and agile environment, where you are encouraged to grow, contribute and create memorable experiences.

We are proud to offer a range of industry-leading benefits designed to support your lifestyle, career and wellbeing, including:

• 50% Food & Beverage discount across all Crystalbrook restaurants and bars
• $99 room rates and a generous friends and family accommodation discount
• Enhanced parental leave and lifestyle benefits
• A commitment to a greener future through responsible and sustainable practices
• Access to our internal mobility program and team reward schemes
• Online learning and training with tailored career development pathways
• A culture of collaboration, elevating experiences and celebrating diversity
• Career opportunities across a growing, dynamic and progressive hotel collection
• Regular service recognition and team engagement events
