SOUS CHEF

Luxury Island Resort • Seychelles • USD $3,000 per month + Service Charge

ABOUT THE ROLE

We are searching for a creative and hands-on Sous Chef specializing in Greek and Italian cuisine for a luxury island resort in the Seychelles. Greek cuisine is the primary focus of this role, and we are looking for someone with deep knowledge, genuine passion, and creative flair within this tradition. This is a senior kitchen leadership role supporting the Executive Chef in delivering exceptional culinary experiences across a multi-outlet luxury environment.

WHAT YOU'LL DO

  • Lead day-to-day kitchen operations, ensuring consistent food quality, presentation, and service flow across all outlets
  • Support the Executive Chef in menu planning and execution with a focus on authentic Greek and Italian cuisine
  • Take a hands-on leadership role during service, maintaining high standards of timing, presentation, and guest satisfaction
  • Supervise, mentor, and develop the kitchen brigade, fostering teamwork, discipline, and a culture of continuous improvement
  • Enforce food safety, HACCP compliance, and kitchen organisation standards at all times
  • Manage food cost control, portioning, inventory, and waste reduction in line with budget targets
  • Step in to lead kitchen operations in the absence of the Executive Chef

WHAT YOU BRING

  • Strong expertise in traditional and authentic Greek cuisine is essential - this is the primary focus of the role
  • Solid background in Italian cuisine with the ability to execute both cuisines to a high standard
  • A creative approach to menu development with the ability to bring fresh ideas while honouring culinary traditions
  • Proven experience as a Sous Chef or Executive Sous Chef in a luxury resort or fine dining environment
  • Minimum 5 years of professional kitchen experience, including supervisory roles
  • Solid knowledge of food safety, HACCP, and kitchen operations management
  • Fluent in English and French; additional languages are a strong advantage
  • Formal culinary training or equivalent professional experience
