As Sous Chef, you’ll play a key leadership role in delivering exceptional dining experiences across our breakfast buffet, Ã la carte menu, room service, and Biggles Bar & Grill, ensuring every dish meets our high standards of quality, flavour, and presentation.

What you'll do:

• Support the Executive Chef in leading day-to-day kitchen operations
• Deliver consistently high-quality dishes across all service periods
• Lead, mentor, and motivate the kitchen team
• Ensure presentation standards are maintained at all times
• Maintain a clean, organised, and compliant kitchen environment
• Assist with stock control, ordering, and kitchen administration
• Drive efficiency while maintaining exceptional food quality

What we're looking for:

• Proven experience in a similar role or strong senior chef ready to take the next step

Experience in a high-volume, fast-paced kitchen in a hotel environment

• A passion for creating exceptional dishes and an eye for presentation
• Solid understanding of food safety and hygiene standards
• Strong leadership skills with the ability to inspire and guide a team
• Excellent communication and teamwork skills
• High attention to detail and pride in presentation
• Flexibility to work a rotating roster, including evenings, public holidays and weekends
