MANAGEMENT

• Responsible for Menu Planning, Ordering, Staffing, QHSE Standards, Scullery, Housekeeping and Sanitation, Records Keeping, Invoicing and other Catering associated services.
• Address and correct any deficiencies or Complaints discovered or brought up by the client.
• Ensure all staff are FIT TO WORK and regularly trained.
• Conduct Daily Briefings and update the Team.
• Be present during meal service.
• Conduct regular inspections of the Catering facilities including remote feeding locations.
• Organize special events at the Dining facility as well as in Client specified Venues.
• Closely monitor Packed meals and Grab and Go services to ensure the Highest Standards are always maintained.

ADMINISTRATIVE

• Have complete control over all Government Furnished Equipment (GFE) and Contractor Furnished Equipment (CFE), conduct regular inventory checks and have records readily available when requested by the authorities.
• Closely monitor and check Meal counts, Cash Operations and Records keeping.
• Ensure Materials and supplies are regularly ordered, and sufficient stock levels are always maintained.
• Conduct regular Customer surveys and document.
• Attend all client meetings.
• Ensure all Contractual obligations are met.

Qualifications

• Must be a US Citizen
• Must be able to obtain a Secret Clearance
• Must have a total Catering facility Management experience of over 15 years with a minimum of 3 years continuous service in a Catering facility serving over 8000 meals a day to US Troops
• Must be familiar with NAVMED, Tri-Service Food Code, NAVSUP, OPNAVINST 5100.23, DoD, NAVOSH, NAVFAC MAXIMO, The Armed Forces Recipe Services, Navy Food Service, CNICINST, FSM and STORES Web.
