Role

The Commis plays an important role in supporting the smooth and efficient operation of the kitchen and the delivery of high-quality dining experiences for guests. The position is responsible for assisting with basic food preparation, maintaining a clean and organized workstation, and supporting the culinary team during daily operations and service periods. The Commis follows food safety, hygiene, and kitchen standards while carrying out assigned preparation tasks under the guidance of senior chefs. The role also supports the kitchen team by responding promptly to operational needs, adapting to different tasks, and contributing to a professional, disciplined, and collaborative working environment.

Responsibilities:

• Ensures all kitchen equipment, tools, and utensils are clean, properly maintained, and ready for use before operations.
• Reviews the daily menu, familiarizes themselves with menu items, and informs the Chef in charge of any unavailable items.
• Prepares all required mise-en-place for the assigned area to ensure smooth and timely food preparation.
• Prepares food according to standard recipes, portion sizes, presentation, and quality standards.
• Monitors food supplies and inventory levels and promptly informs the Chef of items requiring replenishment.
• Assists in the preparation of garnishes, vegetables, and other ingredients required for food production.
• Follows established food preparation and cooking procedures to maintain consistency, quality, and proper cost control.
• Observes food safety, hygiene, sanitation, and proper handling procedures for kitchen equipment and utensils at all times.
• Maintains personal hygiene and ensures assigned workstations, equipment, and surrounding areas are clean and organized.
• Works collaboratively with the kitchen team, follows company policies and the Executive Chef’s guidelines, and performs other duties as assigned by the immediate superior or management.

Qualifications

• Graduate of Culinary Arts, Hotel and Restaurant Management, or a related vocational/technical course; relevant culinary training is an advantage.
• Previous experience in a professional kitchen, hotel, resort, or restaurant environment is preferred.
• Prior experience with international or luxury hotel brands is an advantage.
• Basic knowledge of food preparation, cooking techniques, and kitchen operations.
• Familiarity with food safety, hygiene, sanitation, and proper food handling practices.
• Ability to follow standard recipes, portioning guidelines, and food presentation standards.
• Good attention to detail and ability to maintain consistency and quality in food preparation.
• Ability to work efficiently and remain organized in a fast-paced kitchen environment.
• Team player with a positive attitude, willingness to learn, and ability to follow instructions from senior chefs.
• Flexible and willing to work shifting schedules, weekends, and holidays based on operational requirements.
