Job Summary
The Sanitation Aide is responsible for maintaining high standards of cleanliness, sanitation, and organization throughout assigned kitchen and food service areas. This position ensures that dishware, glassware, china, utensils, pots, pans, equipment, work areas, and other items are properly cleaned, sanitized, and safely stored. The Sanitation Aide may work in various areas throughout the hotel, including restaurants, banquet/event spaces, cafeterias, employee dining areas, kitchens, and other food and beverage operations, based on business and operational needs.
Duties
- Use established guidelines to correctly operate and maintain the dish machine. Wash glasses, dishes, utensils, and other appropriate items using the standard dish rack and established procedures.
- Wash pots and pans only in the designated pot washer’s area, following proper sanitation and safety procedures.
- Ensure that all required cleaning is performed to keep assigned kitchen and food service areas neat, clean, and sanitary at all times. This includes sweeping up broken glass or dishes, mopping spills, cleaning floors, and maintaining cleanliness of work areas.
- Empty full and heavy trash cans. Ensure trash cans are sprayed and sanitized after each use and that new trash bags are placed in the containers after cleaning.
- Follow all MSDS (Material Safety Data Sheet) protocols, chemical handling procedures, PPE requirements, and applicable hotel, health department, food safety, and safety guidelines.
- Assist with cleaning and sanitizing kitchen equipment, work surfaces, floors, sinks, drains, storage areas, and other designated areas as needed.
- Properly clean, sanitize, organize, and store dishes, glassware, utensils, pots, pans, and other kitchen equipment following established procedures.
- Perform duties in various areas of the hotel based on business and operational needs. Assignments may include restaurants, banquet/event spaces, cafeterias, employee dining areas, kitchens, Stewarding, and other food and beverage areas.
- Assist with banquet events and other food service functions when needed, including plating, setup, breakdown, cleaning, and sanitation.
- Assist with the setup, cleaning, and breakdown of restaurant, banquet, cafeteria, employee dining, kitchen, and other food and beverage areas as assigned.
- Maintain adequate supplies of cleaning chemicals, trash bags, paper products, and other sanitation-related items in assigned areas. Notify the supervisor when supplies are low.
- Report broken equipment, unsafe conditions, spills, damaged items, or other sanitation and safety concerns to the appropriate supervisor promptly.
- Work cooperatively with Culinary, Food & Beverage, Banquets, Stewarding, and other hotel departments to maintain a clean, safe, and sanitary environment.
- Be flexible and willing to assist in different areas and perform additional duties as operational needs change, including during high occupancy, busy meal periods, special events, and banquet functions.
- Follow all hotel policies and procedures, including attendance, safety, sanitation, security, and guest service standards.
- Perform other related duties and responsibilities as assigned by management.

- Ability to work flexible and varying schedules, including weekends, holidays, early mornings, evenings, and other shifts as required to meet the business needs of the property.
- Ability to work effectively in a fast-paced environment, maintain focus and attention to detail, and complete assigned tasks in a timely manner despite frequent interruptions.
- Ability to follow established sanitation, safety, food handling, chemical handling, and operating procedures.
- Ability to work independently and as part of a team while maintaining a positive and cooperative working relationship with associates and other departments.
- Ability to adapt to changing priorities and work assignments and assist in various areas of the hotel as operational needs require.
- Regular and reliable attendance in accordance with established hotel guidelines and policies.
- Ability to maintain professional relationships with associates and maintain the confidentiality of guest and employee information at all times.
- Ability to communicate effectively with supervisors, coworkers, and other hotel departments.
- Ability to safely operate and use assigned cleaning equipment, tools, and supplies after appropriate training.
Physical Requirements
- Ability to stand and walk for extended periods of time throughout the work shift.
- Ability to frequently bend, stoop, squat, kneel, reach, stretch, push, pull, and perform other physical movements necessary to complete assigned duties.
- Ability to lift, carry, push, and transport items weighing up to 100 pounds, with or without reasonable accommodation, as required by the position.
- Ability to work in environments that may be hot, cold, humid, wet, noisy, or subject to temperature changes.
- Ability to perform repetitive motions associated with cleaning, washing, lifting, pushing, pulling, and other sanitation duties.
- Ability to safely handle dishes, glassware, pots, pans, equipment, cleaning supplies, and other materials used in the performance of the job.
- Ability to maintain sufficient visual, auditory, and physical capabilities to safely perform essential job functions and respond to workplace conditions and instructions.
