Exceptional Hospitality Starts with You

Bring warm hospitality and a hands-on approach to a dining experience centered on sushi and a thoughtfully paired beer program. As the Restaurant Manager of Moody Tongue Sushi, you will work closely with hotel Food & Beverage leadership, the culinary team, and Moody Tongue representatives to uphold service standards and create memorable experiences for hotel guests and local diners.

Here's what you'll do during a typical day:

  • Ensure seamless operations: Lead daily restaurant service, including opening and closing, reservations, seating, and service pacing. Coordinate with the culinary team to maintain readiness, presentation, and timely delivery.
  • Enhance guest satisfaction and service excellence: Maintain an active presence on the floor, build guest relationships, and resolve concerns promptly. Monitor guest feedback and reservation preferences to improve service consistency and encourage repeat visits.
  • Drive operational efficiency: Prepare schedules aligned with forecasted business, monitor sales and labor, and manage beverage inventory, ordering, and waste. Maintain accurate POS and cash-handling practices and coordinate food cost controls with the culinary team.
  • Elevate quality and service standards: Uphold Hilton and Moody Tongue Sushi standards in partnership with hotel leadership and Moody Tongue representatives. Support approved promotions, pairing experiences, and private dining opportunities that grow revenue and profitability.
  • Inspire and develop the team: Supervise, coach, and develop team members through pre-shift briefings, ongoing feedback, and recognition. Build knowledge of sushi, ingredients, allergens, craft beer, sake, wine, and beverage pairings to support confident recommendations and attentive service.
  • Uphold regulatory standards: Maintain compliance with health, safety, sanitation, and responsible alcohol service requirements. Reinforce allergy communication, cleanliness, and safe service practices to protect guests and team members.
