About Joud Coffee

Joud Coffee is a home-grown specialty brand from Abu Dhabi (est. 2015) with flagship cafés and coffee shops across the UAE. We’re building a high-performance, guest-obsessed café culture and are hiring a Restaurant Manager to lead one of our flagship locations.

The role (why it exists)

Own the café’s results end-to-end—people, product, service, and P&L You’ll coach a winning team, deliver 5-star hospitality, and run a tight operation that hits target sales, COGS, labor, and EBITDA

What you’ll do

  • Lead daily floor operations (FOH & BOH): pre-shift briefs, sectioning, table turns, speed of service, guest recovery.
  • P&L ownership: weekly flash reviews; track sales, COGS, labor; close gaps with action plans.
  • Budgeting & forecasting: build the annual outlet budget; monthly re-forecasts for sales, labor hours, and purchasing.
  • Drive commercial KPIs: AOV, UPC/attach-rate, NPS/mystery shopper, waste %, stock variance, and staff productivity.
  • Scheduling & labor planning to target % of sales; approve timesheets and optimize coverage.
  • Inventory & cost control: ordering, par levels, cycle counts, waste logs; work with CPU/roastery for accuracy and freshness.
  • People leadership: hire, onboard, train, and performance-manage to clear KPIs; run coaching plans and recognition.
  • Standards & safety: HACCP/food safety, cleanliness, maintenance tickets, opening/closing & cash controls.
  • Marketing & guest growth: execute LTOs, collabs, and local store marketing with the Marketing team; own community relationships.
  • Reporting & tools: keep dashboards and logs up to date (POS/inventory/ERP), submit weekly performance summaries with actions.

What you’ll need (must-haves)

  • 3–5+ years as Restaurant/Café Manager or strong Assistant Manager in a high-volume, full-service café/restaurant.
  • Proven P&L ownership and hands-on budgeting & forecasting experience.
  • Strong people leadership: hiring, coaching, scheduling, and performance management.
  • Solid grasp of inventory, purchasing, and cost control; confident with spreadsheets/dashboards.
  • Guest-first mindset with excellent communication; calm under pressure and solutions-oriented.
  • Availability for shifts, weekends, and holidays; right to work in the UAE.

Nice to have

  • Specialty coffee knowledge and barista training.
  • Experience with POS/inventory/ERP systems (e.g., Foodics, Supy, Microsoft Dynamics 365 Business Central) and LMS (e.g., Wisetail).
  • Pre-opening or multi-site experience; Arabic & English bilingual.
