Restaurant Manager – From Here By Mike

1 Hotel Melbourne | Docklands Salary: $79,500–$81,000 per annum

At 1 Hotel Melbourne, we believe great hospitality starts with a team that feels supported, inspired and proud of what they do. We’re looking for a Restaurant Manager to lead our From Here By Mike Hatted Restaurant, create memorable guest experiences and build a positive, high-performing team.

Reporting to the Director of Food & Beverage, you’ll take ownership of daily restaurant operations, from service standards and team development to sales, costs and financial performance.

What you’ll do

• Lead the restaurant team across a seven-day operation, maintaining warm, attentive service during every meal period.
• Coach, develop and support team members, including the Assistant Restaurant Manager.
• Plan staffing and oversee onboarding and training so the team is set up to succeed.
• Respond to guest feedback and resolve concerns with care and ownership.
• Manage labour, food and beverage costs while identifying opportunities to grow sales.
• Review results, including covers, average spend and guest feedback, and turn insights into practical improvements.
• Work closely with Culinary, Marketing and other hotel teams to bring the restaurant experience to life.
• Uphold 1 Hotels’ brand standards and create a workplace where people can do their best work.

What you’ll bring

• At least four years’ management experience in a luxury hotel or comparable hospitality environment.
• Strong restaurant operations experience and a sound understanding of budgets, P&L, labour and cost control.
• A genuine passion for hospitality, with a hands-on approach to leading service.
• Clear communication, sound judgement and the ability to stay calm under pressure.
• Availability to work across a seven-day roster.
