Job Description

Located on the shores of the World Heritage-listed Shark Bay, RAC Monkey Mia Dolphin Resort offers a truly unique work environment, famous for its beachfront location and the incredible daily dolphin interactions.

We are seeking an experienced full-time Restaurant Manager to join us on a 6-month fixed-term contact to lead our Food & Beverage operations, overseeing daily service and driving a high-performing team across our outlets.

Set against a stunning coastal backdrop, this role works closely with the Resort Manager and Head Chef to deliver exceptional dining experiences and ensure smooth, efficient operations across the resort’s food and beverage offerings. Included accommodation on-site is available, making this an ideal opportunity for local candidates or those looking to relocate and live on-site.

What will you be doing?

As Restaurant Manager, you will lead the Food & Beverage team, ensuring service standards, financial performance and team engagement are consistently achieved.

In this role, you will:

  • Lead and manage day-to-day Food & Beverage operations across outlets
  • Build a strong partnership with the Head Chef to deliver high-quality food and service experiences
  • Recruit, train, coach and performance manage Food & Beverage team members
  • Develop rosters aligned to operational needs while managing labour costs
  • Monitor revenue, cost of sales and wages to meet budget targets
  • Assist in menu development, promotions and outlet improvements
  • Maintain strong relationships with suppliers and manage stock control
  • Ensure compliance with Liquor Licensing, OH&S and food safety standards
  • Manage guest feedback, resolve complaints and drive continuous improvement
  • Prepare reports on outlet performance and contribute to strategic planning

What are we looking for in you?

  • Previous experience in a Restaurant Manager or senior hospitality leadership role
  • Strong knowledge of food and beverage operations, service standards and cost control
  • Proven ability to lead, develop and motivate a team
  • Experience managing budgets, rosters and operational performance
  • Excellent communication and stakeholder management skills
  • A strong guest-first mindset with a focus on delivering exceptional service
  • Relevant qualifications in Hospitality or Management (desirable)
  • Current Responsible Service of Alcohol (RSA) certificate
  • Approved Manager’s Licence (or willingness to obtain)
  • Willingness to obtain a National Police Check
  • Availability to work a 7-day rotating roster, including weekends and public holidays
