The Opportunity

This is not just another restaurant leadership role.

We are seeking an exceptional hospitality leader to take ownership of Nobu Melbourne, one of Melbourne’s most recognised dining destinations.

Reporting to the Head of Premium Dining, you will be the entrepreneurial leader, cultural ambassador and commercial driver of one of Crown Melbourne's flagship venues.

As General Manager, you will have full accountability for the venue's performance, reputation and future success. This is a rare opportunity to influence the next chapter of Nobu Melbourne, driving its evolution as a world-class dining destination where every guest feels like a VIP and every team member contributes to an exceptional culture.

You will be equally comfortable leading service on the floor as you are analysing financial performance, building strategic partnerships, developing future leaders and delivering strong commercial outcomes. Working closely with both Front of House and Culinary teams, you will create a truly unified culture focused on excellence, innovation and memorable guest experiences.

In this role, you will:

  • Lead and inspire the overall operation of Nobu Melbourne, ensuring exceptional service delivery and operational excellence across all aspects of the business.

  • Take full ownership of the venue's P&L performance, driving revenue growth, managing costs and delivering sustainable profitability.

  • Foster a high-performance "one team" culture that seamlessly connects Front of House and Back of House operations.

  • Create an environment where every guest receives an elevated, personalised and memorable experience.

  • Analyse guest feedback, commercial data and performance metrics to identify opportunities for continuous improvement and innovation.

  • Lead, coach and develop a talented leadership team while creating clear succession and career pathways for future hospitality leaders

  • Be a visible and inspiring leader, particularly during peak service periods, setting the standard for hospitality excellence.

About You

You are an accomplished hospitality executive with a proven track record leading premium dining venues at the highest level. Passionate about exceptional food, service and people leadership, you thrive in fast-paced environments and understand what it takes to operate a world-class restaurant brand.

You will bring:

  • Extensive senior leadership experience within premium dining, luxury hospitality or Michelin-starred restaurant environments.

  • Proven success managing full P&L accountability across large-scale, high-performing hospitality operations.

  • Strong commercial acumen with the ability to translate operational and financial insights into measurable business outcomes.

  • A demonstrated ability to unite culinary and service teams around a shared vision and culture.

  • Exceptional guest-focus with a passion for creating unforgettable dining experiences and building brand reputation.

  • Experience partnering with Marketing teams to drive venue activations, promotional campaigns and guest engagement initiatives.

  • Strong stakeholder management skills with the ability to influence and collaborate across diverse business functions.

  • Outstanding leadership capability with a passion for mentoring and developing future hospitality talent.

  • Current Responsible Service of Alcohol (RSA) certification.
