Cimera has quickly become one of Denver’s most critically acclaimed culinary openings, blending bold Pan-Latin flavors, handcrafted cocktails, and panoramic Mile-High City and Rocky Mountain views. From bright ceviches and Colombian arepas to Nikkei-inspired seafood and artful Latin cocktails, Cimera delivers an immersive dining experience that celebrates culture, creativity, and connection. The energetic rooftop design, mural-filled interiors, and outdoor terrace, and two private dining rooms create an unforgettable destination for both locals and visitors alike.
Cimera is a standout concept developed in collaboration with Apicii, a bespoke hospitality management firm known for activating dynamic dining brands and elevated experiences across major U.S. markets. Under the culinary leadership of internationally acclaimed Peruvian chef Diego Muñoz and Executive Chef Geoff Cox., Cimera’s menu is a contemporary celebration of Latin American flavors and global technique.
