Home to Dan Hong’s iconic Queen Chow, this exciting new venue will showcase bold, modern Cantonese cuisine in a spectacular coastal setting.
Set within the broader Narooma Precinct alongside The Quarterdeck and Lynch’s, The Whale brings together premium hospitality, stunning ocean views and exceptional local produce. This is a rare opportunity to shape a flagship regional restaurant within one of NSW’s most exciting hospitality destinations.
The Role
A proven Head Chef or Senior Sous Chef with deep experience in Cantonese or Chinese cuisine, strong people leadership capability and the confidence to help launch a high-profile new restaurant.
You will bring calm operational discipline, commercial awareness and a passion for developing chefs while maintaining the standards Queen Chow is known for.

Merivale’s fashionable beginnings were soon followed by a venture into hospitality, opening a Thai tea café within their Sydney CBD fashion building in 1970. From here, Merivale’s hospitality roots were firmly planted.
