Functions:
Essential Duties and Responsibilities
Sets up and prepares equipment and/or mold mixer
Adjusting, calibrating and engaging controls
Completes all required documentation:
Meat temperatures
Batch weights or quantities
Trees per hour
Down time
Cleans and soaks casings
Reviews production flow sheet for production sequencing and raw material planned usage
Physically transfers pallets of raw materials, using fork lift to Velati staging area
Operation of: conveyor belts, Velati, forklift, pallet jack, dice cutter, and mixers
Visually inspects raw material before processing, notifies supervisor of any defects
Unloads and opens boxes filled with frozen raw meat to be fed onto conveyor
Checks temperature on meat blocks before dumping
Monitors conveyor for any jams or pile ups
Operates equipment to create batches, transports Vmaggs filled with salami mixture to stuffing
Operators must follow strict adherence to salame for piece weight, pieces per string, weight per string, strings per wagon, wagons per minute, and wagons’ weight
Operators monitor the quality of paste for: smear, temperature, visual fat content
Operates Stuffing machine, ensuring mixture is efficiently stuffed into casing
Hand Ties Secchi and all artisan products
Tightly tie product and uses sharp tool (knife) to cut strand
Hangs salami onto tree racks and transports to holding area
Responsible for the break down of stuffers, Velati, mixers and auto clippers, mold applicators at end of shift
Housekeeping:maintains a clean working environment and stacks empty boxes. Cleans area using hoses, brushes or chemical solutions
Performs required stretches and exercises.
Report anything unusual, including accidents, breakage or malfunction of machineries and equipment to your line coordinator / supervisor.
Wear all appropriate PPE. Work safely, and use equipment only when trained.
Attend all required meetings
May be assigned or required to perform other duties, responsibilities and functions assigned by the production line coordinator and/or supervisor and/or production management.
Educational and Job Experience Requirements
High school diploma desired
Food industry or manufacturing experience desired
Knowledge of basic math
Computer literate
Basic English reading, writing and comprehension skills
Job-related Knowledge, Skills and Abilities
Strong knowledge and skill of manufacturing and or production, including but not limited to food manufacturing
Ability to set up, breakdown and assemble equipment
Demonstrated and proven problem solving and troubleshooting skills.
Ability to work with spices, allergens, cleaning chemicals and mold
Strong knowledge of General Manufacturing Practices (GMP’s),Standard Operating Procedures (SOP’s) and BRC standards
Drives continuous improvement in both production process and occupational safety
Ability to work effectively both independently and within a team environment, maintaining a commitment to results.
Ability to work a minimum of 8 hours a day regardless of the department assignment and overtime when needed, including weekends and holidays.
Line Coordinator backup: Ability to communicate in English (basic level)

The essential functions of the job and working conditions requires the individual to walk, stand, stoop, bend, reach, grasp, grip, pull and push 1200+ lbs. wagons, and lift up to 70 lbs.
The job requires the individual to work in a light to moderate noise environment, and/or up to a high level of noise environment that requires mandated personal protective equipment.Working environment may include but is not limited to: the donning, wearing, and usage of hairnets, smocks, coats, gloves, boots, glasses, hearing protection and hard hats.
The position may be exposed to extreme climate (e.g. hot, dry, cold, and wet) conditions; may potentially be exposed to allergens/mold/cleaning chemicals.
Work Schedule Requires flexibility to include overtime and weekends.
