Responsable de planificar y elaborar los menús diarios, asegurando que cumplan con las especificaciones del cliente, los estándares de calidad y los costos establecidos.
Entre sus principales tareas se encuentran la organización de la producción de cocina, control de pedidos, compras, stock, inventarios, gramajes, recetas, mermas y food cost. Además, tiene un rol de liderazgo del equipo de cocina, distribuyendo y supervisando tareas, capacitando al personal y promoviendo un buen clima laboral. Es responsable del cumplimiento de las normas de seguridad alimentaria y HACCP y participa activamente en los procesos de mejora continua y Sistema de Gerenciamiento Lean.
Perfil buscado: formación en gastronomía valorada, conocimientos de costos, rendimientos, mermas y producción gastronómica, y mínimo 1 año de experiencia liderando equipos de cocina Se busca una persona organizada, resolutiva, responsable, con iniciativa, capacidad de planificación, liderazgo y orientación a resultados.
