V.Ships Leisure is looking for Provision Master on behalf of Orient Express Sailing Yachts.
The Provision Master is in charge of the management of all hotel F&B stores onboard, including receiving and distributing supplies to all departments as needed. The Provision Master is in charge of inspecting all supplies for quality and accurate quantities (with assistance from Executive Chef and Bar Manager), and maintains a proper storage protocol as well as a re-distribution of supplies to various departments as needed.

Key Responsibilities

  • Maintains the entire dry and refrigerated stores in an orderly and sanitary manner.
  • Takes care of all stores arriving from Shore side and is responsible for the proper and safe storage of all goods.
  • Responsible for storing all products in the right place and controls quantities received.
  • Distributes all products in accordance with written orders to the sub-departments. No delivery of items without a written Requisition.
  • Makes an inventory control and spot-checks whenever requested by the Hotel Director.
  • Presents information to the Executive Chef on which items are to be used first (slow-moving items).
  • Checks on a continuous basis all equipment, fridges, switches, plugs, lights and reports any irregularities to the Hotel Engineer.
  • Familiar with proper sanitation procedures and follows U.S. Public Health requirements.
  • Ensures proper rotation of food and use FIST IN FIRST OUT procedure.
  • Receives food supplies with assistance from the Executive Chef.
  • Receiving Beverage Supplies with the assistance from the Bar Manager and head sommelier.
  • Checking all received Provisions for accuracy to the delivery note/invoice from the individual suppliers.
  • Keeping an updated F&B inventory at all times (daily).
  • Take each cruise a physical inventory of the storerooms.
  • Trains storerooms personnel to the proper USPH standards and procedures and cleaning using the vessel manual.
  • Prepares a voyage report at the end of the cruise.
  • Control and monitor in accordance with the company rules all the temperatures from the storerooms.
  • Responsible for the distribution and proper use of PSE for loading teams.
  • Responsible for the management, update and communication of the rotation plan for crew members in collaboration with the hotel director and assistant purser.
  • Conducts staff’ orientation and mid/end contract performance evaluations and makes recommendations for promotion. Introduces new crew members to their working areas and to the rules and regulations on board.

Education/Experience/Qualifications:

  • Languages: Fluent English mandatory.
  • Education: A high-school degree or equivalent in Hospitality or related field.
  • Previous professional experience: 1-2 years experience as Provision Master or Hotel Controller.
  • Shipboard experience: Yes
  • Valid STCW certificates.
  • Valid Pre-Employment Medical.
  • C1D visa mandatory for all positions.
