Department: Food & Beverage Operations
Reports To: Executive Chef / Kitchen Manager
Schedule: Full-time; open availability including weekends and holidays is required.

The Product Receiver - Food & Beverage is responsible for the accurate and efficient receipt, inspection, and documentation of all food, beverage, and operational supply deliveries. This role ensures all products meet company quality standards and comply with all applicable food safety regulations, including the Hawaii Department of Health Food Safety Code (HAR Title 11, Chapter 50) and United States Department of Agriculture (USDA) and Food and Drug Administration (FDA) guidelines.

The Product Receiver - Food & Beverage plays a critical role in maintaining food safety, preventing contamination, protecting inventory integrity, and supporting smooth kitchen and front-of-house operations.

Essential Duties and Responsibilities
Receiving & Inspection
• Receive all food, beverage, and supply deliveries according to scheduled times.
• Verify invoices against purchase orders for accuracy in quantity, quality, and pricing.
• Inspect all products for quality, proper labeling, intact packaging, and signs of damage or contamination.
• Check and document product temperatures upon delivery to ensure compliance:
• Refrigerated foods: 41°F or below
• Frozen foods: 0°F or below
• Hot prepared foods: 135°F or above
• Reject and document any items that do not meet company or regulatory standards.
• Communicate discrepancies promptly with vendors and management.

Food Safety & Compliance
• Follow Hazard Analysis and Critical Control Point (HACCP) principles during receiving procedures.
• Ensure compliance with Hawaiʻi Department of Health food safety requirements.
• Maintain proper receiving logs, temperature logs, and vendor documentation.
• Prevent cross-contamination by separating raw and ready-to-eat products during transport and storage.
• Ensure proper date marking and rotation using FIFO (First-In, First-Out).
• Maintain clean and sanitized receiving and storage areas.

Storage & Inventory Control
• Promptly transport products to appropriate storage areas (dry storage, walk-in refrigerator, freezer).
• Ensure proper shelving practices (6 inches off the floor, proper air circulation).
• Organize storage areas to maintain cleanliness, accessibility, and code compliance.
• Assist with weekly and monthly inventory counts.
• Report discrepancies, spoilage, or shortages to management immediately.

Safety & Sanitation
• Follow all workplace safety procedures and proper lifting techniques.
• Use the required Personal Protective Equipment (PPE).
• Maintain clean docks, storage rooms, and equipment.
• Assist in pest prevention by inspecting deliveries and maintaining clean environments.

Qualifications
• High school diploma or equivalent preferred.
• Previous receiving, warehouse, or food service experience preferred.
• Valid Hawaiʻi Food Handler Certification required (or ability to obtain upon hire).
• Strong knowledge of food safety and sanitation practices.
• Ability to read invoices, purchase orders, and product labels accurately.
• Basic math and computer skills for inventory documentation.

Physical Requirements
• Ability to lift and carry up to 50 lbs regularly.
• Ability to stand, bend, stoop, and walk for extended periods.
• Ability to work in varying temperatures (freezer, refrigerator, loading dock).

Work Environment
• This position operates in a fast-paced food and beverage environment, including kitchens, storage areas, loading docks, and outdoor delivery zones. The role requires flexibility in scheduling, including early mornings, weekends, and holidays as needed.
