We are seeking a Pizza Chef to join our dynamic team and play a key role in supporting the Food and Beverage function within our organisation. Role Overview:
The Pizza Chef is responsible for preparing, cooking, and presenting high-quality pizzas and related Italian dishes according to established recipes and standards. The role ensures consistent food quality, freshness, presentation, hygiene, and efficient kitchen operations while applying strong technical skills in dough preparation, fermentation, stretching, topping, baking, and finishing. The Pizza Chef will also support the restaurant’s reopening by assisting with kitchen setup, equipment readiness, and establishing consistent production and operating standards.
Main Key Responsibilities:
- Prepare pizza dough, sauces, toppings, and other ingredients according to established recipes, specifications, and preparation methods.
- Demonstrate proficiency in dough mixing, portioning, proofing, stretching, shaping, and hand-tossing techniques.
- Prepare, cook, and present pizzas to established standards for taste, texture, colour, consistency, portion, and presentation.
- Operate and monitor pizza ovens safely, maintaining appropriate cooking temperatures and times.
- Ensure all ingredients, dough, toppings, equipment, and mise en place are prepared and readily available throughout service.
- Assist with the preparation of other menu items and support other kitchen sections as required.
- Maintain a clean, organised, fully stocked, and service-ready pizza workstation, including completing opening and closing duties.
- Maintain high standards of food safety, hygiene, sanitation, HACCP, storage, labelling, dating, and FIFO rotation to prevent cross-contamination and protect food quality.
- Monitor ingredient quality and stock levels, communicate replenishment needs, assist with inventory control, and minimise waste through effective preparation and portion control.
- Work efficiently during busy service periods while ensuring orders are completed accurately and within required service times.
- Communicate effectively with the culinary team and provide feedback on ingredients, equipment, recipes, and production processes to support operational efficiency.
- Support the training and knowledge-sharing of other culinary team members as required.
- Maintain professional conduct, appearance, confidentiality, and compliance with The Crane Resort's policies, Occupational Health & Safety requirements, and service standards.
- Participate in training and development activities and perform other reasonable duties as assigned.
- Contribute to an exceptional guest experience through consistent food quality, presentation, and professional service.
Required Skills & Qualifications:
- Minimum 2–3 years’ experience as a Pizza Chef, Pizza Cook, or in a similar culinary role, preferably in an Italian restaurant, upscale restaurant, hotel, resort, or high-volume kitchen.
- Formal culinary training or certification from a recognised culinary institution is an asset.
- Demonstrated knowledge and experience in pizza preparation, including dough mixing, fermentation, hydration, proofing, shaping, topping, and baking.
- Experience operating professional pizza ovens.
- Strong knowledge of traditional Italian ingredients, flavours, and preparation methods.
- Knowledge of food safety, sanitation, allergen awareness, food storage, portion control, food cost management, and waste reduction.
- Food safety and sanitation certification is an asset.

- Experience with authentic Italian pizza, including traditional styles, Italian ingredients, long-fermentation doughs, and professional pizza ovens.
- Experience with food costing, inventory, portion control, or training junior culinary team members is an asset.
- Ability to maintain productivity, consistency, and attention to detail during busy service periods.
- Ability to stand for extended periods and perform repetitive preparation and cooking tasks in a hot kitchen environment.
- Ability to safely lift, carry, and move kitchen supplies and equipment weighing up to 40 kg.
- Ability to work flexible shifts, including evenings, weekends, public holidays, and holidays.
