About Wynn Al Marjan Island:
Wynn Al Marjan Island will be the first integrated resort in the UAE. Set to open in 2027, the resort will be located 50 miles from Dubai International Airport in the emirate of Ras Al Khaimah. The resort will offer 1,530 rooms and suites, 22 restaurants, lounges, and bars, a theater, and a beach club. It will feature multiple swimming and wading pools, water features, a five-star spa, a salon, a shopping promenade, and a celebrations and events center.
About the Position:
Wynn Al Marjan Island is currently seeking a Pastry Sous Chef – Conservatory Food Hall to join the Culinary team.
The primary duties and responsibilities of this role are:
- Support the Executive Chef in overseeing daily production operations and workflow.
- Ensure all products meet established quality, presentation, and consistency standards.
- Supervise and guide kitchen team members during production periods.
- Maintain strict compliance with hygiene, sanitation, and food safety standards.
- Assist with production planning, scheduling, and prioritization.
- Monitor product handling, storage, and usage to minimize waste.
- Support training, coaching, and on‑the‑job development of team members.
- Ensure equipment and work areas are maintained in clean, safe, and operational condition.
- Carry out additional duties as assigned by the Executive Chef.
- Supervise daily pastry production including desserts, cakes, plated desserts, amenities, and special orders.
- Ensure precision, consistency, and visual presentation across all pastry items.
About You:
The ideal candidate for this position will have the following experience and qualifications:
- Recognized culinary qualification or equivalent professional training in Pastry Arts / Pâtisserie.
- Demonstrated professional experience in a luxury hotel, resort, or high‑volume pastry production environment.
- Sound technical knowledge of classical and contemporary pastry production, including desserts, cakes, and finishing standards.
- Proven ability to supervise and support production teams, ensuring consistency, quality, and adherence to established standards.
- Working knowledge of food safety, hygiene, and HACCP principles.
- Ability to operate effectively in a structured, deadline‑driven production environment.
- Strong organizational, communication, and interpersonal skills.
- Ability to work collaboratively within a multi‑disciplinary culinary team.
