Pastry Chef

Playground is an internationally renowned gaming destination located a short 15-minute drive south of downtown Montreal, within the Mohawk territory of Kahnawake. We are currently expanding, unveiling new gaming floors, a luxurious hotel, and specialized dining options.

As a Pastry Chef, you will be the creative force behind our dessert menu. You'll craft a variety of delectable treats, ensuring they're not only delicious but also beautifully presented. Your responsibilities include the production of different recipes, service and maintaining a clean kitchen.

Responsibilities:

• By following established standards, prepare a wide variety of goods such as cakes, cookies, pies, etc.
• Decorate pastries using different icings and toppings to ensure a beautiful and exciting presentation
• Check the quality of the material and the condition of the equipment used for cooking
• Maintain a clean and orderly cooking station and adhere to health and safety standards
• Conduct the daily tour of all kitchens to assess the quality and the quantities of each dessert item

Requirements:

• Minimum 1 to 2 years of experience inpastry production, chefin a gourmetrestaurant, hotel or high-volume pastry shop
• Great attention to detail and creativity
• In-depth knowledge of sanitation principles, food preparation, baking techniques and nutrition
• A certificate in culinary arts, pastry-making, baking or a relevant field is an asset
• Bilingual (French & English), both spoken and written, is an asset
• Formal culinary training is preferred, or an equivalent combination of education and workexperience
• Ability to work well under pressure in a fast-paced environment
• Ability to work cohesively as part of a team
• Good ability to adapt and work with team members from different cultures
• Dynamic, motivated and efficient
• Holds a food handler training certificate with MAPAQ (recommended)
• Capable of standing and walking for a long period of time
• Capable of lifting and carrying loads of up to 25lbs
• Capable of kneeling, pushing and pulling
• Comfortable using ladders, stairs and ramps
• Must have a valid Canadian working visa

Responsibilités :

• Suivre les normes établies pour préparer une grande variété de produits tels que des gâteaux, des biscuits, des tartes, etc.
• Décorer les pâtisseries à l’aide de différents glaçages et garnitures afin d’assurer une présentation attrayante et soignée
• Vérifier la qualité des matières premières ainsi que l’état des équipements utilisés pour la production
• Maintenir un poste de travail propre et bien organisé, en respectant les normes d’hygiène et de sécurité
• Effectuer une tournée quotidienne de toutes les cuisines afin d’évaluer la qualité et les quantités de chaque produit dessert

Exigences :

• Minimum de 1 à 2 années d’expérience en production de pâtisseries, en tant que chef dans un restaurant gastronomique, dans un hôtel ou une pâtisserie à volume élevé
• Grande créativité et attention aux détails
• Aptitudes de leadership
• Connaissances approfondies des principes de sanitation, de préparation des aliments, de pâtisserie et de nutrition
• Connaissances de cuisson dans un contexte de restrictions alimentaires (sans gluten, sans sucre, etc.)
• Certificat en arts culinaires, pâtisserie, boulangerie ou domaine connexe
• Bilingue (français et anglais), à l’écrit et l’oral (un atout)
• Formation culinaire formelle préférable, ou une combinaison équivalente d’éducation et d’expérience de travail
• Aptitude à travailler sous pression dans un environnement dynamique
• Aptitude à travailler de façon cohérente en équipe
• Aptitude d’adaptation et à travailler dans un environnement multiculturel
• Dynamique, motivé et efficace
• Posséder un certificat de formation MAPAQ en manipulation des aliments
• Capable de rester debout et de marcher pour de longues périodes
• Capable de soulever et de transporter des charges allant jusqu’à 25 lb
• Capable de se mettre à genoux, pousser et tirer
• Aisance avec des échelles, escaliers et rampes
• Doit détenir un visa de travail canadien valide
