Your Role in Our Pastry Kitchen
We are looking for a talented, organised Pastry Chef de Partie with a keen eye for detail. If you believe that the "sweet moment" is the most memorable part of a meal, we want to meet you. As our Pastry Chef de Partie, you will lead our pastry and bakery section, ensuring that our desserts and treats reflect the elegance and soul of the Aethos brand.

Key Responsibilities:


•Pastry Section Leader: Autonomously manage the pastry station, from breakfast viennoiseries and artisanal breads to fine-dining desserts and event catering.
•Master of Precision: Ensure every creation leaves the kitchen meeting Aethos’ 5* standards, focusing on technical accuracy, delicate plating, and balanced flavours.
•Resource & Stock Management: Supervise pastry inventory, managing high-quality ingredients (chocolates, flours, seasonal fruits) and minimising waste.
•Team Mentor: Guide and inspire Commis and interns, fostering a culture of patience, precision, and technical growth within the pastry team.
•Safety Guardian (HACCP): Ensure strict compliance with all hygiene and food safety standards, with particular attention to temperature control and allergen management.
•Creative Collaboration: Support the Executive Chef in developing seasonal desserts and signature products that align with our sustainable philosophy.
•Cohesion Agent: Maintain seamless communication with front-of-house and the kitchen to ensure the "sweet moment" reaches the table at the perfect time.

Essential Skills:


•Solid, proven experience in pastry within luxury hotels or high-end restaurants (minimum 3-4 years).
•Strong technical command of bakery, confectionery, and modern plating techniques.
•Ability to lead by example, maintaining calm and focus during peak service times.
•Excellent organisational skills and a meticulous, artistic eye for detail.
•Proactive attitude and a desire to innovate within the Aethos aesthetic.
•Fluency in Portuguese and English (preferred, given our international environment).
