The Lab Operator responsabilities include to test and standardize all finished product prior to canning or bulk shipment, using the mojonnier testing method, to assure that all product meets minimum standards. To keep corresponding records according to internal and regulatory requirements.To monitor fat and solids concentrations during the processing of each batch. To schedule raw and finished silo usage to ensure proper rotation of product and timely cleaning of equipment.To participate in required nestle laboratory evaluation programs. Employees shall follow all the plant safety and quality rules, report incidents & unsafe conditions immediately and maintain compliance with regulations.
PRIMARY RESPONSIBILITIES:
1. Test and standardize all finished product prior to canning or shipping, adding the necessary quantities of fat, solids or water along with the required amount of vitamins to standardize each batch to the minimum legal requirements.
2. Calculate and convey to the pan operator, any information necessary to achieve desired results during the evaporation process. Provide information to the evaporator operator as to the proper quantities of ingredients to add to each mix. Assure that all silos are rotated properly to assure product is used on a first in first out basis and that silo’s are CIP’d in a timely manner,
3. Microscopically check each mix for proper homogenization prior to canning.
4. Re-test samples from each batch after sterilization to verify results. Gather retention samples and rotate same as required by Quality Assurance.
5. Keep the work area clean, clean utensils and vitamins addition mix tank as required, and any other duties which may be assigned.
6. Possible contact with bulk haulers or with other plants to whom we supply bulk ingredients
7. Operation and cleanliness of mettler scale, mojonnier tester, microscope and vitamin addition tank as well as various incidental equipment such as gauges and thermometers.
8. Computer operation is required. Must monitor all equipment to assure correct operation.
9. Responsible for allocating food additives and for rotating product and lab supplies to assure usage on a first in, first out basis.
10. Responsible for recording test results from each test performed and for completing tank and mix 0. K. Slips for each silo standardized and each bulk shipment made. This person also completes a batch standardizing reports for all milk processed daily as well as keeping daily inventories on all milk products and ingredients tracking records. Any other record keeping that may be required either internally or by regulatory agencies.

The approximate hourly pay for this position is $25.13. Please note that the pay range provided is a good faith estimate for the position at the time of posting. Final compensation may vary based on factors including but not limited to knowledge, skills and abilities as well as geographic location.
