About the Role

BAKE Cheese Tart is Japan's iconic freshly baked cheese tart brand, operating in Singapore as a within Takashimaya Shopping Centre. We are looking for a hands-on Operations Manager / Store Leader to run the day-to-day business of the outlet — from freshly baked product quality and store team management to inventory planning on an imported Japanese supply chain and consignment reporting with the department store.

This is not a back-office role. You will own the outlet's operational performance end-to-end and work directly with the owner on commercial decisions.

Key Responsibilities

Store Operations & Product Quality

Oversee daily operations of the concession counter, including opening/closing procedures, cash and POS management, and consignment sales reconciliation

Ensure consistent execution of the freshly baked product program: baking schedules, batch timing against footfall patterns, display standards, and hold-time discipline

Maintain strict food safety and hygiene standards in line with SFA requirements; own all licensing, audit readiness, and documentation

Manage expiry and waste actively — track sell-through by SKU and adjust baking/display quantities daily to minimise waste

Customer Service & Brand Experience

Set and uphold the service standard on the floor: warm, efficient, queue-aware service consistent with Japanese omotenashi hospitality

Handle customer feedback, complaints, and product quality issues on the spot — resolve, recover, and log recurring issues for follow-up

Manage refunds, exchanges, and gifting/pre-order requests in line with store and Takashimaya policies

Coach staff on product storytelling (ingredients, how to enjoy, storage/reheating advice) so every customer interaction builds the brand

Monitor online reviews and mall feedback channels; respond or escalate as appropriate

Team Management

Recruit, train, roster, and supervise retail/baking staff, including part-timers for peak periods

Build service and product knowledge standards consistent with a premium Japanese brand

Manage payroll inputs, attendance, and staffing cost within budget

Inventory & Supply Chain

Plan and place reorders of frozen product and packaging from warehouse, balancing shipment size against daily sales

Maintain accurate stock counts across store and storage, with visibility on cover-days by SKU and seasonal demand uplifts (e.g. festive periods, mall campaigns)

Landlord & Commercial

Serve as day-to-day liaison with Takashimaya: consignment reporting, promotional space applications, participation in mall-wide events and fairs

Execute promotional campaigns, seasonal launches, and pop-up activations (e.g. atrium fairs) from planning through on-ground delivery

Monitor daily/weekly sales against targets and breakeven; report performance and flag issues early with proposed fixes

Reporting & Analysis

Maintain sales, waste, and inventory data in structured form (Excel/Sheets)

Support the owner with input into pricing, bundle mechanics, and SKU decisions using actual store data

Requirements

3–6 years of F&B or food retail operations experience, with at least 1–2 years supervising a team; bakery, Japanese F&B, or department-store concession experience strongly preferred

Valid Food Hygiene certification (or willingness to obtain immediately); familiarity with SFA compliance

Comfortable being hands-on at the counter, including baking/finishing product when needed

Strong Excel/Google Sheets skills — you can build and maintain a simple stock and sales tracker without help

Experience with inventory planning or import logistics is a significant plus

Able to work weekends, public holidays, and extended hours during peak retail periods

Fluent English; Japanese or Mandarin is a plus
