JOB PURPOSE

The F&B Operations & New Openings Lead supports the global development and operational implementation of the Group’s Food & Beverage initiatives. The role acts as a point of reference between the F&B team, internal departments, and external stakeholders, ensuring the successful development of new openings, the optimization of existing locations, and the implementation of strategic projects for the Prada and Miu Miu brands.

The position contributes to business performance by supporting the achievement of annual financial targets, through performance monitoring, trend analysis, and the implementation of targeted operational actions.

RESPONSIBILITIES

Global F&B Development and New Openings

  • Support the end-to-end development of new F&B openings globally, from the planning phase to operational implementation.
  • Coordinate the full project lifecycle, including concept definition, planning, timeline management, and operational readiness for opening.
  • Collaborate with internal teams (design, retail, marketing, procurement, finance, HR) and external partners to ensure proper project execution.
  • Support the definition of F&B concepts, menus, equipment, layouts, uniforms, operational materials, and tableware.
  • Contribute to defining the business model for each project (direct vs. indirect management).
  • Support the process of obtaining licenses and permits from the relevant authorities.

Operational Implementation

  • Ensure operational readiness and opening of new locations by coordinating staff onboarding, suppliers, and operational procedures.
  • Oversee the implementation of operational and service standards, ensuring consistency with brand values and image.
  • Collaborate in recruitment and onboarding processes in line with the defined operating model.

Performance Monitoring and Business Optimization

  • Monitor the performance of existing locations by analyzing operational trends and financial results.
  • Identify and suggest corrective actions and improvement plans to realign results with budget targets.
  • Support the implementation of initiatives aimed at improving operational efficiency and profitability.

Strategy and Budgeting

  • Collaborate in the development of the annual strategy for F&B locations.
  • Support the preparation and consolidation of operational and financial budgets (capex, staffing, rent, food cost).
  • Contribute to the development of business plans and business cases for new openings and expansion projects.
  • Collaborate in defining pricing strategies and product positioning.

Data Analysis, Reporting, and Financial Tools

  • Develop and manage weekly, monthly, and annual operational and financial reports to monitor store performance.
  • Create and maintain advanced Excel analysis and monitoring files, including:
    • budget tracking and forecasts
    • business plans and investment models
    • store occupancy and productivity analysis
    • operational cost monitoring
    • pricing analysis and price grids
    • sales trend analysis and operational KPIs
  • Support the creation of dashboards and monitoring tools for management.
  • Prepare analytical materials and presentations for strategic meetings and business reviews.

Special Projects and Brand Collaboration

  • Support the development and implementation of special projects for Prada and Miu Miu, ensuring alignment with brand positioning.
  • Collaborate with the Prada Fashion team and other departments when F&B initiatives are integrated into retail spaces or special projects.

KNOWLEDGE AND SKILLS

Experience in operations management in the hospitality or F&B sector.

Project management skills and experience in managing new openings.

Solid knowledge of financial analysis and F&B business models.

Advanced proficiency in Excel for data analysis, budgeting, business planning, and reporting.

Ability to analyze operational and financial data to support strategic decision-making.

Strong organizational, analytical, and problem-solving skills.

Excellent communication and coordination skills when working with cross-functional teams.

Fluency in English and Italian; a third language is considered a plus.

Willingness to travel internationally.

GAS: 35.000 - 45.000 €
