Job Description

The Catering Services Manager is responsible for the planning, coordination, and execution of catering events at Palms Casino Resort. This position serves as the primary contact for clients after the sale has been secured, ensuring seamless event planning and execution through detailed communication with clients and internal departments. The Catering Services Manager is responsible for creating event documentation, managing client expectations, coordinating event logistics, overseeing billing accuracy, and delivering exceptional service that results in high guest satisfaction, repeat business, and client retention.

Core Responsibilities:

  • Manage, coordinate, and execute catering events from turnover through post-event follow-up, ensuring all contractual agreements, event details, and client expectations are fulfilled.
  • Serve as the primary liaison between clients and resort departments, ensuring accurate communication of event requirements and timely resolution of client requests.
  • Conduct planning meetings, pre-convention meetings, menu consultations, site inspections, and other event-related appointments as needed.
  • Create and maintain accurate Banquet Event Orders (BEOs), event resumes, diagrams, invoices, and other event documentation required to execute successful events.
  • Partner with Banquets, Culinary, Convention Services, Audio Visual, Security, Facilities, and other operational departments to ensure flawless event execution.
  • Attend daily, weekly, and pre-event meetings to communicate event details and ensure all supporting departments are prepared to meet client needs.
  • Manage event timelines, room setups, food and beverage requirements, entertainment, vendor coordination, and other event logistics.
  • Review and reconcile event charges to ensure accurate billing, timely invoicing, and proper collection of client payments.
  • Maintain detailed and accurate event information within Delphi to support operational execution, reporting, and financial accountability.
  • Monitor event revenues, food and beverage minimums, guarantees, and consumption to ensure financial goals are achieved.
  • Maintain strong working relationships with clients, vendors, and internal departments to promote exceptional service and operational excellence.
  • Assist clients with menu selections, event enhancements, and operational recommendations to maximize the overall event experience.
  • Conduct post-event reviews and follow-up communications to ensure client satisfaction and identify future business opportunities.
  • Perform other job-related duties as assigned.

Qualifications:

  • Candidate must be at least 21 years of age.
  • Alcohol Awareness Card.
  • Food Handler’s Card.
  • Strong organizational skills and ability to function under time constraints.
  • Must have excellent interpersonal skills to deal effectively with all business contacts.
  • Must have ability to plan, organize, and execute multiple projects within established timelines.
  • Must be able to present information in clear, concise terms.
  • Detail oriented and demonstrated problem solving skills.
  • Excellent customer services skills.
  • Professional appearance and demeanor.
  • Ability to communicate effectively in English, in both written and oral forms.
  • Proficiency in the following systems and programs: Excel, Word, Power Point, and Outlook.
  • Collaboration and problem-solving skills.

Preferred:

  • Bachelor’s degree in a related field or a minimum of five years of previous relevant experience.
  • Proficient in Microsoft Office.
  • Working knowledge of Delphi or other similar catering sales system.
  • Working knowledge of Tripleseat preferred.
  • Food Handler’s Card and ServeSafe Certified or able to obtain during the probationary period.
  • Proof of eligibility to work in the United States.
  • Catering Software and/or CRM Software knowledge a plus.

  • May be exposed to smoke.
  • The noise level in the work environment is usually moderate to loud.
