POSITION PURPOSE SUMMARY:
The Lead Cook is responsible to supervise the kitchen staff and maintain the overall cleanliness and upkeep of The Edmonton Centre of Hope’s kitchen. The Lead Cook provides direction and supervision to Cooks and assists the Food Services Manager with the smooth, efficient, and effective delivery of food services. The Lead Cook prepares and serves nutritious meals as outlined on menus in accordance with applicable food service and safety regulations, provides efficient delivery of food services delivered out of the kitchen of the Edmonton Centre of Hope, and maintains the food services area in a clean and tidy manner at all times.
ACCOUNTABILITIES:
Lead Cook Supervisory Duties
• The Lead Cook is supervised by the Food Services Manager (FSM) and should expect to receive direction specific to the task and programming needs from the FSM.
• The Lead Cook is responsible for all tasks described in the Cook job description in addition to the responsibilities specific below:
o Assist in the preparation of schedules for staff to assure that at all times are covered with the appropriate number and classification of staff.
o Provide training and guidance to kitchen staff as required.
o In consultation with the FSM, review production schedule to determine food requirements including variety and quantity of food for preparation, give input into foodstuffs & supply ordering and maintain inventories at an appropriate level.
o Provide supervision of all Food Services staff during appointed shift.
o Supervise and assign jobs to fine options, community hours and volunteers.
o May participate in the interview and hiring process of Cook and Kitchen staff
Food Services Duties
• Perform all food services duties in a manner that meets or exceeds Food Safe, OH&S, Canada Food Guideline and Edmonton Centre of Hope standards.
• Operate all food services equipment according to instructions and safety standards.
• Perform all food services duties as part of the food services team as directed.
• Ensure that main stock room inventory is always kept orderly. Ensure records are accurate, updated daily, and are utilized in ordering process.
• Perform all cleaning duties and ensure that Food Services area (storage, kitchen, dining room) are clean, orderly, and meet expected standards.
• Ensure that all food service facilities and equipment are maintained according to the Edmonton Centre of Hope standards. Any deficiencies should be recorded and given to the FSM for follow up.
• Ensure that the food is properly prepared and attractively served according to Health and Safety Standards.
• Participate in any evaluation of the food services provided by the Edmonton Center of Hope and ensure that any changes to such services are implemented.
• Report in writing any Food Services area deficiencies to the FSM.
• Assist in the planning of menus that will provide nutritious meals of good quality for the clients in consultation with the FSM and the Canada Food Guide.
• Arrange to provide catering service to other parts of the center and outside, as requested. (e.g. staff picnic, Community Christmas Dinner, staff meetings, Managers Meetings)
• Perform lifting tasks as required up to a maximum of 23 kilos or 50 lbs using the proper lifting procedures.
• Other related duties as assigned.
CRITICAL RELATIONSHIP MANAGEMENT
Internal:
• Various ad hoc Committees as assigned.
• OH&S Safety Committee member.
MANAGERIAL RESPONSIBILITY:
• This position reports directly to the Food Services Manager.
• This position has Cooks and Kitchen staff as direct report.
FINANCIAL AND MATERIALS MANAGEMENT:
• Ensure that all food service facilities and equipment are maintained according to the Edmonton Centre of Hope standards.
• Ensure records are accurate, updated daily, and are utilized in ordering process.
• Ensure that donations of food are integrated into the menu daily.
WORKING CONDITIONS:
• The incumbent is responsible as a group/work leader. The Lead Cook is responsible for providing direction and checking results, but generally works along with those supervised. The Lead Cook may demonstrate work methods to new employees.
• The performance of the job requires a frequent amount of standing, manipulation of food, moderate amount of lifting, carrying supplies, walking and occasionally washing floors and kitchen equipment. The incumbent is required to lift to a maximum of 23 kilos or 50 lbs.
• Must be in good physical condition that allows bending, kneeling or stooping so they can lift items such as loads of dishes, kitchen tools, machinery, and food preparation equipment.
• The performance of the job requires adherence to safety procedures and regulations.

EDUCATION AND EXPERIENCE QUALIFICATIONS:
Education, Qualifications and Certifications:
• High School Diploma or equivalent
• Culinary education/ trade papers preferred.
• Food Safe Handling Certificate
• Clear Criminal Record Check with Vulnerable Sector Check
Experience and Skilled Knowledge Requirements:
• Minimum 1 year supervisory experience in an institutional or commercial kitchen with experience directly related to the duties and responsibilities specified for Lead Cook.
• Experience in using different cooking tools, equipment and utensils.
• Ability to follow recipe instructions and make correct measurements of ingredients.
• Strong knowledge of proper food handling procedures.
• Good working knowledge of accepted sanitization standards and health code.
• Must have basic computer skills (Word, Excel, Outlook, PowerPoint, OneNote etc.)
Skills and Capabilities:
• Must have good communication skills and be able to work in a team setting in a busy kitchen atmosphere.
• Able to work in a fast-paced environment.
• Effective organizational, planning and time management skills
• Reliability and punctuality are essential
• Decision making and problem solving skills.
• Knowledge of purchasing, understanding of receiving, stock rotation and storage.
• Able to work within the mandate of The Salvation Army Mission Statement, exemplifying Christian standards of conduct.
The incumbent’s work environment is typically at work sites within residential settings, and may require working under the following disagreeable conditions:

• The incumbent will work on call 24/7 or as scheduled.

This is casual position with no fixed working schedule.
Compensation:
The target hiring range for this position is $21.28 to $22.04 with a maximum of $22.80.
Placement in the salary range will be based on factors such as market conditions, internal equity, and candidate experience, skills, and qualifications relevant to the role.
