POSITION OVERVIEW
The Kitchen Supervisor supports the Culinary leadership team in overseeing the daily operations of the resort's kitchens, restaurants, banquets, and special events. This position is responsible for ensuring food quality, sanitation compliance, operational efficiency, and associate development while maintaining Marriott and Westin brand standards. The Kitchen Supervisor leads by example, coaches culinary associates, monitors food production and presentation, and helps create exceptional dining experiences that support guest satisfaction and well-being. Based on duties identified in the existing Kitchen Supervisor position, including training staff, monitoring quality, maintaining food safety standards, and leading daily culinary operations.
KEY RESPONSIBILITIES
- Supervise daily kitchen operations across restaurant, banquet, and outlet venues.
- Lead, coach, train, and develop culinary associates to ensure consistency, productivity, and adherence to culinary standards.
- Assist with staffing, scheduling, shift assignments, and labor management based on business demands.
- Monitor food preparation, presentation, portioning, and recipe compliance to ensure exceptional quality and consistency.
- Conduct regular inspections of workstations, walk-ins, freezers, and storage areas to ensure cleanliness, organization, and compliance with food safety standards.
- Ensure adherence to local health department regulations, EcoSure standards, Marriott food safety requirements, and all sanitation protocols.
- Maintain proper food labeling, dating, rotation practices (FIFO), and inventory controls.
- Assist with ordering food, supplies, and equipment while helping manage costs and minimize waste.
- Verify completion of daily prep lists and production requirements.
- Conduct daily lineups and communicate important operational information to culinary associates.
- Collaborate with Restaurant, Banquet, Stewarding, and Food & Beverage leadership teams to support seamless operations and outstanding guest experiences.
- Ensure compliance with company policies, safety standards, and applicable laws.
- Support payroll accuracy, timekeeping compliance, and operational recordkeeping as needed.
Qualifications: QUALIFICATIONS
- High school diploma or equivalent required; culinary degree or professional culinary training preferred.
- Minimum two years of culinary leadership or supervisory experience in a hotel, resort, restaurant, or high-volume food service operation.
- Strong knowledge of culinary techniques, food production methods, and kitchen operations.
- Knowledge of food safety, sanitation, HACCP principles, and health department regulations.
- Proven leadership, coaching, and team development skills.
- Strong verbal and written communication skills.
- Basic computer proficiency, including email, scheduling, and inventory systems.
- Ability to manage multiple priorities in a fast-paced environment.
- Strong organizational skills and attention to detail.
- Hospitality and Marriott-brand experience preferred.
- Ability to obtain and maintain all required food handler and government certifications.
PHYSICAL REQUIREMENTS & WORK ENVIRONMENT
- Ability to stand and walk for extended periods throughout the shift.
- Ability to lift and/or move up to 50 pounds regularly.
- Ability to bend, reach, stoop, kneel, and work in confined kitchen spaces.
- Ability to safely operate kitchen equipment including slicers, mixers, grinders, ovens, and food processors.
- Must be able to work in varying temperatures, including refrigerators, freezers, and high-temperature kitchen environments.
