JOB SUMMARY: Your Flight Plan!
Under the direct supervision of the General Manager, this hands-on position supervises, manages and is responsible for all aspects of the culinary operation including purchasing, receiving, storage, preparations, production and service.

RESPONSIBILITIES AND DUTIES: Ready to Fly!
- Maintains quality products and presentations according to company standards.
- Responsible for all food preparation for the Cafes and Banquets.
- Maintains high sanitation standards, including food handling and storage.
- Produce Kitchen Production Schedules on a daily and weekly basis.
- Conducts monthly sanitation and safety inspections with the General Manager.
- Assists in development of menu selections and standardize recipes with the Department Managers.
- Observe workers engaged in preparing, portioning, and garnishing foods to ensure that methods of cooking and sizes of portions are consistent in all food outlets.
- Frequently instruct and trains cooking personnel in proper cooking techniques.
- Cooks and prepares dishes, soups, sauces, main course, desserts for all banquet functions.
- Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
- Establish the day's priorities and assign production and prep tasks to staff to execute.
- Meet with General Manager to review schedules, assignments, anticipated business levels, changes, and other information pertinent to the job performance.
- Communicate additions or changes to the assignments as they arise throughout the shift.
- Responsible for end of month physical inventories, food credits, waste and spoilage, transfers and requisitions in all food and beverage locations.
- Review the market list with Sysco for cost fluctuation on high volume items.
- Requisition the day’s supplies and ensure that they are received and stored correctly. Ensure quality of products received.
- Ensure that each Kitchen work area is stocked with specified tools, supplies and equipment to meet the business demand.
- Monitor performance of staff and ensure all procedures are completed to the department standards; rectify deficiencies with respective personnel.
- Work on PC line during service and assist wherever needed.
- Inspect the cleanliness of the line, floor, all kitchen stations. Direct staff to rectify any deficiencies.
- Ensure that staff maintain and strictly abide by Florida State sanitation/Health regulations and Club requirements.
- Maintain proper storage procedures as specified by Health Department and Vesta requirements.
- Instruct staff in the correct usage and care of all machinery in the Kitchen operation, stressing safety.
- Complete work orders for maintenance repairs and submit to Maintenance directly for urgent repairs.
- Review sales and food cost daily; resolve any discrepancies with the General Manager.
- Minimize waste and maintain controls to attain forecasted food and labor costs.
- Foster and promote a cooperative working climate, maximizing productivity and employee morale.
- Prepare weekly work schedules for all assigned personnel in accordance with staffing guidelines and forecasted labor costs. Adjust schedules throughout the week to meet business demands.
- This position manages all kitchen staff and operations.
REQUIRED EXPERIENCE AND QUALIFICATIONS: The Wingspan Needed!
- Ability to stand for extended periods of time; bend, stretch and reach.
- Prior kitchen experience
- Five to seven years prior management experience.
- High standards of integrity and reliability.
- College degree in hospitality, management, or related field preferred..
- Occasional travel may be required
PHYSICAL DEMANDS AND WORK ENVIRONMENT: Our Nest is your Nest!
- This position is very active and requires standing, walking, bending, kneeling, stooping and crouching.
- The position may require occasional lifting of products weighing up to 20 pounds.
- This position operates in a restaurant setting. The noise level in the work environment can be loud. The employee may be exposed to hazards including, but are not limited to, cuts, slipping, tripping, falls and burns. Frequent hand washing is required.
