Full timeUnder general supervision plans, prepares and serves meals for juveniles in the Detention Home and manages the kitchen operation by performing the following duties.

Safety-Sensitive Position: Yes (as defined under Oklahoma Statute Title 63 § 427.8)

All candidates conditionally offered transfer, promotion or initial hiring into a DOT/safety-sensitive position shall submit to testing for drugs and alcohol and test negative before performing any job functions that are safety-sensitive or require a CDL. External job applicants with a confirmed positive drug or alcohol test result shall be denied employment and shall be required to wait one year before applying for another position within Tulsa County.

ESSENTIAL JOB FUNCTIONS

  • Manage the kitchen staff and arranges work schedules.
  • Maintain leave records for staff.
  • Prepare meals according to the designated menu of the Detention Home and number of persons to be served.
  • Maintain a security count of all utensils used at each meal and the return of same before juveniles leave the dining area.
  • Prepare or leave instructions for the preparation of snacks.
  • Plan for and provide for the purchasing of all necessary food and commodities as determined through inventory, quality, yield and cost.
  • Maintain kitchen inventory and request supplies as needed.
  • Purchase weekly perishable foods as needed and in accordance with Tulsa County procurement policy and procedure as determined through inventory.
  • Clean and keep sanitary all areas of the kitchen and storage space.
  • Meet City/County Health Department sanitation codes as well as Child Nutrition Program requirements.
  • Provide proper care of equipment such as defrosting freezers, cleaning filters and reporting any equipment failure immediately to the Superintendent.
  • Frequently uses the computer to produce reports or ordering food products and inventory.
  • Perform other duties as assigned.

REQUIRED SKILLS, KNOWLEDGE AND ABILITIES

Skill in estimating food quantity requirements; in training and supervising others; and in preparing meals to present an attractive appearance and pleasant flavor.

Knowledge of general food preparation and cooking; of cutting meat; of menu planning; of nutritional value of foods in order to prepare a balanced diet; of inventory control; and of purchasing food and supplies for a kitchen operation.

Ability to understand and follow oral and written instructions; to deal tactfully with others; to apply sensory perception in judging flavor and readiness of foods by smell, taste or appearance; to meet meal schedules; to work varied shifts; and to understand and follow departmental policies and procedures.

SUPERVISORY RESPONSIBILITIES

Directly supervises 5 employees in the Juvenile Detention Home Kitchen. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

EDUCATION AND/OR EXPERIENCE

High school diploma or general education degree (GED) as defined by Oklahoma Administrative Code § 377:3-13-43 and supplemented by Vo-Tech training in Culinary Arts; over five years of satisfactory full time paid employment in institutional food service; or equivalent combination of education and experience.

LANGUAGE SKILLS

Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.

MATHEMATICAL SKILLS

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.

REASONING ABILITY

Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

COMPUTER SKILLS

To perform this job successfully, an individual should have knowledge of Internet software; Inventory software and Microsoft Excel Spreadsheet software.

CERTIFICATES, LICENSE, REGISTRATIONS

Valid Food Handlers Permit

Valid Food Manager's Certification

Must be at least 21 years of age- defined by Oklahoma Administrative Code § 377:3-13-43
