1. Contrôle et suivi de l’hygiène générale :

  • Inspecter régulièrement les locaux (cuisines, restaurants, chambres, back-of-house, etc.).

  • Assurer la conformité avec les normes HACCP, ISO 22000 ou autres standards applicables.

  • Suivre les plans de nettoyage et désinfection des différents départements.

2. Sécurité alimentaire :

  • Effectuer les contrôles de température (stockage, cuisson, refroidissement…).

  • Vérifier la traçabilité des produits et le respect des DLC/DDM.

  • S’assurer du respect des bonnes pratiques de manipulation des aliments.

3. Formation et sensibilisation du personnel :

  • Former les équipes aux normes d’hygiène personnelle et professionnelle.

  • Sensibiliser aux risques sanitaires et aux procédures de nettoyage.

  • Organiser des sessions de recyclage régulières.

4. Gestion des produits d’entretien :

  • Suivre les stocks de produits de nettoyage et désinfectants.

  • Veiller à leur bon usage et au respect des normes de sécurité.

Qualifications

  • Connaissance approfondie des normes HACCP et ISO 22000.

  • Esprit d’observation et rigueur.

  • Bonnes capacités de communication.

  • Maîtrise des outils de reporting (Excel, outils qualité...).

  • Discrétion, professionnalisme et sens du détails
