Job Description

Location: The Cape Town EDITION, Cape Town, South Africa
Department: Food & Beverage / Culinary
Reports To: Director of Food & Beverage / Executive Chef

The Hygiene Manager is responsible for ensuring the highest levels of food safety, sanitation, and hygiene standards across all hotel operations, with a strong focus on Food & Beverage outlets, kitchens, storage areas, and back-of-house spaces.

This role plays a critical part in maintaining compliance with local health regulations, brand standards, and international best practices, while safeguarding guest and associate wellbeing.

The Hygiene Manager will also oversee the Stewarding Team, ensuring efficient cleaning operations, proper equipment handling, and overall cleanliness of all culinary and service areas.

Key Responsibilities Hygiene & Food Safety Management
  • Implement, monitor, and continuously improve the hotel’s Food Safety Management System (FSMS), aligned with HACCP principles.
  • Ensure compliance with South African health regulations, municipal by-laws, and Marriott/EDITION brand standards.
  • Conduct regular hygiene audits and inspections across all kitchens, restaurants, bars, storage, and receiving areas.
  • Maintain documentation for food safety procedures, temperature logs, cleaning schedules, and pest control records.
  • Lead corrective action plans for any non-compliance identified during internal or external audits.
  • Work closely with suppliers to ensure food safety standards are maintained throughout the supply chain.
Sanitation & Cleanliness
  • Establish and enforce cleaning and sanitation protocols across all back-of-house areas.
  • Ensure proper use, storage, and handling of cleaning chemicals in line with safety standards.
  • Oversee pest control programs in collaboration with approved service providers.
  • Ensure waste management processes are compliant, efficient, and environmentally responsible.
Stewarding Team Oversight
  • Directly manage the Stewarding Team, including recruitment, training, scheduling, and performance management.
  • Ensure all kitchen equipment, utensils, and facilities are cleaned and maintained to the highest standard.
  • Optimize stewarding operations to support smooth kitchen and service delivery.
  • Monitor inventory and usage of cleaning supplies and stewarding equipment.
  • Promote a culture of accountability, teamwork, and operational excellence within the stewarding function.
Training & Awareness
  • Conduct ongoing hygiene and food safety training for all Food & Beverage and Culinary associates.
  • Ensure new hires receive proper onboarding related to hygiene standards and safe food handling.
  • Promote a culture of hygiene awareness across the hotel through regular communication and engagement.
Audit & Compliance
  • Prepare for and manage internal, brand, and external audits (e.g., health inspections).
  • Ensure the hotel consistently meets or exceeds required audit scores.
  • Report hygiene performance metrics and risks to senior management.
Health & Safety
  • Support the implementation of occupational health and safety standards related to hygiene and sanitation.
  • Ensure safe working practices within the stewarding and kitchen environments.
Qualifications & Experience
  • Diploma or Degree in Food Technology, Environmental Health, Hospitality Management, or related field.
  • Minimum 3–5 years’ experience in a hygiene, food safety, or stewarding management role within a hotel or large-scale hospitality environment.
  • Strong knowledge of HACCP and food safety regulations in South Africa.
  • Experience managing teams, preferably stewarding or back-of-house operations.
  • Proficient in audit processes, compliance management, and reporting.
  • Strong leadership, organizational, and communication skills.
