The Venue

Located in the centre of Sydney, tucked away in Ash Street, you'll feel like you've stumbled into a little cobble-stone back street of des Champs- Élysées, Paris. Every detail of Felix has been considered - from the imported French chandeliers, to parisian subway tiles and the beautiful pewter bar. Our ambiance is matched by attentive service and classic French fare, delivered with precision.

Head Chef has created a produce-driven menu of divine food; think chicken liver pâté, gruyère soufflé and steak frites. The seafood bar is a sight to behold- piled with prawns, oysters, lobsters and Moreton Bay bugs.

The extensive wine list is perfectly matched with the food with 1500+ labels to choose from.

With a terrific mix of new and old world wine from premium to super premium, there is always something interesting to try.

The Role

In this role you’ll be given the opportunity to use your creativity, introduce new and unique offerings to the wine list and take charge of the wine program for one of Merivale’s most treasured venues.

Working closely and mentored by Master Sommelier Franck Moreau MS, Group Beverage Manager and Dorianne Neimard, Head of Wine.

You will inspire, lead, and mentor a team of over 4 high performing Sommeliers.

Collaborate with the Restaurant Management team delivering exceptional guest service we well as driving revenue and cost results.

This is a critical role with Merivale’s sommelier group, you’ll set the standard for world-class service and share your wine knowledge with esteemed guests to ensure their experience at Felix is one they’ll never forget.

To be successful in the role, you will have:

• previous Head Sommelier experience within a similar high-end restaurant environment.
• enjoy working with extensive wine lists.
• be an inspirational leader with a proven track record of developing and mentoring the other Sommeliers within your team.
• have a thirst for knowledge and growth.
• a passion for providing the customer with an outstanding experience.
