We are recruiting on behalf of our client, a leading hospitality group in Malta, seeking a talented and experienced Head Chef to lead a premium gastro pub concept in St Julian’s
This is a standout opportunity for a chef specialising in elevated English gastro pub cuisine, with a strong focus on refined comfort food, seasonal ingredients, and exceptional Sunday roast service.
As Head Chef, you will take full ownership of the kitchen, driving both the creative and operational direction of a high-volume, quality-led gastro pub.
From crafting modern British classics to delivering outstanding Sunday roasts, you will lead a high-performing brigade and ensure consistency, quality, and innovation across every service.
• Lead all kitchen operations, ensuring smooth and efficient service at all times
• Design and execute seasonal menus focused on elevated British gastro pub cuisine
• Deliver exceptional Sunday roast offerings with attention to detail and consistency
• Maintain high standards of food quality, presentation, and portion control
• Manage food cost, stock levels, and supplier relationships
• Train, mentor, and develop the kitchen team to maintain high performance
• Ensure full compliance with food safety, hygiene, and HACCP standards
• Collaborate with senior management on concept development and menu evolution
• Proven experience as Head Chef or Senior Sous Chef in a premium gastro pub or restaurant
• Strong expertise in modern British / English cuisine and traditional techniques
• Demonstrated experience delivering high-quality Sunday roast service
• Experience working in Europe or currently based in Malta
• Strong leadership skills with a hands-on and structured approach
• Solid understanding of food costing, kitchen management, and operations
• Ability to perform consistently in a high-volume, fast-paced environment
• Leadership role within a high-profile hospitality project
