Few hospitality roles offer the opportunity to shape a restaurant from day one.

Join us as Head Chef at Clerks House Restaurant within the new London Museum, one of London's most anticipated cultural openings. Launching on 28th November in the heart of historic Smithfield, the museum will welcome visitors from around the world, bringing together London's rich history through world class exhibitions, events and exceptional hospitality.

Clerks House will be Smithfield's new all day dining restaurant and bistro, inspired by London's culinary heritage. With 140 covers, the restaurant will serve breakfast, lunch, afternoon tea, dinner, weekend brunch and Sunday roasts, offering thoughtful, seasonal food that is comforting, contemporary and rooted in quality.

Celebrating the history of the market, our menus will showcase the very best British produce, including beef and lamb from Green & Fortune's own farm, alongside collaborations with leading chefs such as Robin Gill. Sustainability, seasonality and craftsmanship sit at the heart of everything we do.

We are looking for an inspiring Head Chef who combines creativity with strong commercial awareness. You will be passionate about seasonal ingredients, confident developing and costing menus, and committed to delivering consistently exceptional food. Just as importantly, you will be a natural leader who builds high performing teams, develops talent and creates a positive kitchen culture.

Working closely with our senior leadership team and an exciting group of collaborators, you will play a defining role in establishing Clerks House as one of London's leading dining destinations from the very first service.

What makes you the Clerk House Head Chef?

  • Restaurant Leadership. Lead the day to day kitchen operation, setting the standard for exceptional food quality, service and guest experience across breakfast, lunch, afternoon tea, dinner, weekend brunch and Sunday roasts. Ensure every service is delivered with consistency, precision and care.
  • People. Build, coach and inspire a high performing kitchen team, creating a culture of collaboration, accountability and continuous development where people can thrive.
  • Menus. Lead the development of seasonal menus that celebrate outstanding British produce. Working closely with Robin Gill and our wider collaborators, you will create dishes that honour London's culinary heritage while delivering quality, consistency and value.
  • Commercial Performance. Take ownership of menu costing, gross profit, labour planning, stock control and kitchen performance, ensuring the restaurant delivers exceptional food alongside strong commercial results.
  • Collaboration. Work closely with the restaurant management team, Mr Lyan Studio and the wider London Museum operation to create a dining experience that reflects the ambition of one of London's most exciting cultural destinations.

What you’ll bring as Head Chef?

  • Proven experience leading premium restaurant kitchens, with a strong track record of delivering consistently exceptional food and developing seasonal, commercially successful menus.
  • An inspiring, hands on leadership style, with the ability to build, coach and develop high performing teams while remaining calm, organised and decisive during busy services.
  • Strong commercial awareness, with experience managing gross profit, labour, stock control and kitchen performance, alongside a genuine passion for seasonal British produce, sustainability and London's vibrant dining scene.
  • A commitment to exceptional guest experiences, with an eye for detail and a drive to maintain the highest standards of food quality, consistency and presentation.
  • Creativity, curiosity and a collaborative approach, with the confidence to work alongside leading chefs and partners to establish Clerks House as one of London's most exciting new restaurant destinations.
