Job Description

This is an exciting opportunity for a talented Head Chef to contribute to the renowned Belmond Safaris experience, based at Eagle Island Lodge. The Head Chef is responsible for delivering exceptional, innovative, and creative cuisine that consistently exceeds guest expectations. This role requires a hands-on leader who can ensure the smooth operation of the kitchen, meticulous stock management, adherence to stringent hygiene practices, and the continuous development of our culinary team.

Main Duties & Responsibilities

 Culinary Excellence: Oversee daily kitchen activities, including food preparation, ensuring the highest

quality, freshness, and adherence to recipes, menus, and SOPs. Conduct thorough checks of all meals

before service.

 Operational Management: Manage stock levels, control wastage, and maintain awareness of food costs

to minimize spoilage. Ensure all food and mise en place are prepared efficiently and punctually for meal services.

 Hygiene & Safety: Uphold all relevant health, safety, and hygiene standards. Ensure HACCP kitchen

temperature logs are meticulously completed and signed off weekly. Maintain immaculate cleanliness

of all kitchen areas, storerooms, fridges, and freezers.

 Team Leadership & Development: Provide comprehensive guidance, training, and supervision to all

junior kitchen staff.

Foster a culture of continuous learning and adherence to Belmond's high standards.

 Management Responsibilities: Create and implement departmental SOPs, monitor expenditure, protect

confidential information and contribute to measures that improve cost efficiency and customer experience.

Requirements

Required Qualifications, Skills & Experience

 Five years of relevant experience in a similar or senior role within the luxury hospitality/food & beverage

 sector.

 BGCSE completion or above, including good grades in English and Mathematics.

 Relevant culinary and/or field/industry-related diploma preferred.

 Proven leadership ability and experience in handling and coordinating different teams.

 Relevant experience with culinary trends, preparation methods, quality standards, and menu design.

 Good knowledge of different cooking styles, including strong A La carte, fine dining, breakfast, and casual

dining experience.

 Strong knowledge of hygiene & safety standards, including HACCP.

 Strong verbal and written communication skills.

 Strong inventory control and excellent kitchen management skills.

 Must have computer literacy skills.
