Vivat Bacchus is seeking an exceptional General Manager to lead our London Bridge restaurant — a well-established site celebrating the very best of South African food, wine, and hospitality.
This is not just another GM role. We are looking for someone who truly lives and breathes South African culture — whether through personal ties, heritage, or a genuine passion for its cuisine, wines, and vibrant spirit.
Vivat Bacchus is a unique South African-inspired restaurant and wine bar, known for its extensive wine list, premium steaks, and warm, authentic hospitality. Our London Bridge restaurant is a key part of the brand, attracting both loyal regulars and new guests looking for something special — with signature tableside Vivat Bacchus moments that bring theatre, personality, and connection directly to the guest experience.
As General Manager, you will take full ownership of the restaurant’s performance, team, and guest experience. You’ll be responsible for driving commercial success while ensuring every guest leaves with a memorable experience rooted in genuine hospitality.
A key part of the role will be championing and evolving our tableside Vivat Bacchus moments — ensuring they are delivered consistently, confidently, and with genuine flair.
A proven General Manager with strong experience in high-quality, high-volume restaurants
A deep connection to South Africa — either through background, experience, or a strong personal passion for its food, wine, and culture
A natural host who thrives on creating memorable, interactive guest experiences
Passion for service theatre and the ability to bring energy to tableside moments
Strong commercial acumen with a track record of driving revenue and profitability
A hands-on leader who inspires, develops, and retains high-performing teams
Excellent knowledge of food and wine, with a particular interest in South African wines, is highly desirable
Lead and develop a passionate front and back-of-house team
Deliver outstanding guest experiences that reflect our South African identity
Champion and embed tableside Vivat Bacchus moments across the team
Drive sales through events, wine experiences, and local engagement
Manage P&L, budgets, and operational efficiency
Maintain high standards across service, food quality, and compliance
Act as a brand ambassador for Vivat Bacchus
