Basic Purpose

Positions in this jobfamily are assigned responsibilities involving planning,coordinationand direction ofthe operation ofafood service department in a state hospital, school,facilityor institution. This involvesplanning and coordinating the preparation,cookingand serving offood, coordinating and reviewingprojected menu plans with nutrition therapists, including nutritional assessments and care plans, andrequisitioningfood,suppliesand equipment.

TypicalFunctions

  • Plans, coordinates or directs purchasing,food planning, preparation and serving, inventory,cleaningand maintenance ofsanitary standards in the preparation areas, kitchen,servinganddining areas ofthe department.

  • Prepares work schedulesfor employees and patients.

  • Reviews menus and makes changes; plans menus and prepares projected menu plans; andinterprets recipes, modified dietplansand properportioncontrolin accordance withapprovedpolicy.

  • Conducts staffmeetings; attends staffing conferences and makes recommendations concerningoperations.

  • Maintains necessary records and prepares required reports.

  • Analyzesfood costs;assistswith departmental budget issues.

Level Descriptor

At this level ofthis jobfamily employees are assigned overall responsibilityfor the direction andcoordination ofthe operation ofafood service department oflimited size and scope orforassistingin theoperation ofa largerfood service department. Responsibilities will include direction and supervision ofassigned staffwhich may include employees, inmates, students, patients and/or others, and alsoincludes requisitioning produce, commodities, equipment and supplies, receiving and checking shipmentsagainst invoices, ensuringfood items are properly stored, taking inventory and planning and supervisingthe serving ofspecial meals.

Knowledge, Skills, Abilities, and Competencies

Knowledge, Skills and Abilities required at this level include knowledge ofrequisition and inventoryrecords; offood service organization and operation; offood preparation and modified diets; ofsafetyhazards and precautions; ofproper sanitation methods; offood storage methods; ofmenu planning andrecipe interpretation; ofstandard cooking weights and measures; and ofthe principles oftraining.Ability isrequiredto interpret and prepare special dietary menus and menu instructions; toestablishandmaintain effective working relationships with others; to give andfollow oral and written instructions; and toorganize and supervise the work ofothers.

Education and Experience

Education and Experience requirements at this level consist ofan associate’s degree in culinary arts,food management or a similarfield and one year ofexperience in a supervisory capacity or supervising inmates in a commercial or institutionalfood service environment; or an equivalent combination ofeducation and experience, substituting one additional year ofqualifying experiencefor each year ofthe required education.

Note: There is no substitution allowedfor the required one year ofsupervisory or supervision ofinmate experience
