Job Description

The Cook Chill Food Production Center is located on the grounds of the Maplehurst Correctional Facility; however, Cook Chill operates as an independent production facility and is separate from Maplehurst Corrections. There are no inmates on site at any time. Civeo Premium associates do not have any interaction with, nor access to, inmates.

We are seeking a Production Manager to oversee all operational aspects of hot and cold food production. In this role, you will ensure strict adherence to HACCP principles, Advanced Food Safety protocols, company policies, and Ministry regulatory requirements. You will be responsible for maintaining consistent compliance and ensuring the safe, reliable production of high‑quality food products.

Key Responsibilities

  • Oversee planning, coordination, and scheduling of hot and cold food production across all functional areas to meet timelines, volume targets, and standards.

  • Manage production inventory processes, maintain accurate records, and implement waste‑control measures.

  • Partner with the Production Supervisors to assign daily tasks, supervise staff, and optimize staffing and workflow efficiency.

  • Monitor daily operations to ensure effective labour utilization, strong line performance, and adherence to production, safety, and quality requirements.

  • Work closely with Purchasing/Supply Chain to ensure food supplies meet specifications, support client needs, and achieve targeted food‑cost goals.

  • Provide training and coaching to ensure staff comply with HACCP, CCP requirements, SOPs, GMPs, equipment procedures, and Health & Safety standards.

  • Review and verify Critical Control Points in alignment with the HACCP Manual to maintain food safety and audit readiness.

  • Ensure recipes are available and that production volumes are adjusted appropriately to reduce waste and prevent overproduction.

  • Enforce Quality Assurance programs through accurate audits, monitoring practices, and implementing corrective actions.

  • Communicate shortages, substitutions, and production or menu changes to all impacted departments.

  • Develop and manage staff schedules in accordance with Collective Bargaining Agreement requirements and operational needs.

  • Lead production staff through performance monitoring, coaching, feedback, and progressive discipline when required.

  • Maintain strong communication with line supervisors and meal assembly teams to ensure smooth coordination and timely meal completion.

  • Enforce workplace Health & Safety, WHMIS, and OHS requirements while ensuring PPE use and proper incident reporting.

  • Apply Ministry of Correctional Services procedures, standards, and protocols consistently across operations.

  • Participate in training, meetings, audits, and projects supporting continuous improvement.

  • Perform duties aligned with organizational standards, policies, procedures, and Ministry agreements.

  • Complete any additional related duties as assigned.

Qualifications

  • Experience in a highvolume, largescale production kitchen environment in a Cook or Chef capacity is strongly preferred.

  • Postsecondary education in Food and Nutrition or related field or an equivalent combination of education and experience.

  • 5+ years of supervisory experience in a manufacturing, production, or assembly environment.

  • Advanced Food Safety Training is required

  • Demonstrated knowledge of GMP, HACCP, WHMIS including legislative and workplace health & safety regulations.

  • Working knowledge of Microsoft Office Programs (Word, Excel, Outlook).

  • Demonstrated labour relations experience in a unionized setting.

  • Capable of working in all areas of production and adapting to varying operational demands.

  • Proven ability to lead teams, delegate tasks, and motivate line staff in a fastpaced environment.

  • Strong organizational and timemanagement abilities with a focus on meeting production targets and deadlines.

  • Effective English written and verbal communication skills with the ability to interact effectively with crossfunctional teams

  • Demonstrated ability to maintain high standards of quality, safety, and sanitation.

  • Demonstrated flexibility and adaptability in managing changing priorities and work routines.

  • Ability to work within a secure, regulated, and operationally complex environment.

  • Successful completion of vulnerable sector check, criminal record check, and any other required security clearances.
