Food & Beverage is at the heart of the guest experience, and we are looking for an inspiring and commercially driven Food & Beverage Operations Director to lead our operation. You will be responsible for the overall performance of our F&B outlets, combining exceptional service, strong financial performance, and innovative thinking to create memorable experiences for our guests.

As the Food & Beverage Operations Director, you will lead, motivate, and develop the F&B leadership team while maintaining a highly visible presence across the operation. You will work closely with the Executive Chef, Executive Team, Sales & Marketing, and wider hotel leadership to continuously evolve our offering, maximise revenue, and ensure the highest standards of service, quality, and compliance

Job Responsibilities:

Operational & Guest Experience

• Take overall responsibility for the day-to-day operation and performance of all Food & Beverage outlets.
• Maintain a highly visible, hands-on presence across the operation, ensuring service, presentation, atmosphere, and guest experience consistently meet our standards.
• Set clear expectations for the F&B leadership team and hold leaders accountable for delivering exceptional service.
• Monitor food, beverage, and service quality, responding quickly to guest feedback and operational challenges.
• Ensure full compliance with Food Hygiene, Health & Safety, Licensing, and hotel policies and procedures.

People & Leadership

• Lead, inspire, and develop a high-performing Food & Beverage leadership team.
• Create a culture of accountability, recognition, collaboration, and continuous feedback.
• Coach and develop Outlet and Department Managers across leadership, financial management, cost control, forecasting, and revenue generation.
• Lead by example, building strong relationships with colleagues and creating an environment where teams are empowered to contribute and succeed.

Commercial & Financial Performance

• Take overall accountability for the financial performance and profitability of the Food & Beverage operation.
• Review budgets, forecasts, payroll, P&Ls, and outlet performance, taking proactive action to achieve financial targets.
• Identify opportunities to increase revenue and profitability through promotions, upselling, events, product development, and innovative experiences.
• Maintain strong controls around stock, purchasing, labour, and operational costs.
• Oversee capital expenditure and ensure projects are delivered effectively and in line with company guidelines.

Strategy & Innovation

• Continuously challenge the current operation and identify opportunities to improve performance, efficiency, and guest satisfaction.
• Work closely with the Executive Chef to develop innovative F&B strategies and remain relevant within the local and regional market.
• Stay ahead of market trends and guest preferences, introducing new products, services, and experiences.
• Partner with Sales & Marketing to drive promotions, events, and initiatives that increase awareness and revenue.
• Build strong relationships within the local community and hospitality industry, representing the hotel at relevant events and functions.

About you...

• Passionate about Food & Beverage with a m
• inimum of 4 years’ experience leading a high-volume Food & Beverage operation, with responsibility for significant revenue performance.
• Previous experience opening a hotel or restaurant is preferred.
• A post-secondary diploma or degree in Hospitality, Business, or a related field is desirable.
• Expert knowledge of Food & Beverage operations, with a proven track record of strong guest experience, team engagement, and financial performance.
• An inspirational and commercially focused leader who can motivate, develop, and empower high-performing teams.
• Excellent verbal and written communication skills, with the ability to build strong relationships at all levels.
• Highly flexible and able to meet the demands of a 24-hour hotel operation, including evenings, weekends, and holidays when required.
