
Assist in managing the hotel’s Food & Beverage operations to ensure the achievement of established food and beverage quality standards, guest service standards, and departmental revenue and profit targets.
Ensure compliance with local regulations regarding health, safety, and other statutory requirements, as well as brand standards and hotel policies and procedures.
Support the daily operations of the Restaurants and Bars outlets and keep the Director of Restaurants and Bars (or designated person) informed of any significant decisions taken and other relevant operational matters.
Assume the duties and responsibilities of the Director of Restaurants and Bars in his/her absence.
Monitor and analyze the following on an ongoing basis:
Sales performance
Operational costs
Quality and presentation of food and beverage products
Service standards
Condition and cleanliness of facilities and equipment
Quality of entertainment where applicable
Guest satisfaction and feedback
Marketing initiatives and effectiveness
Assist the Manager in developing attractive and popular menus and beverage lists that provide value for money, in line with IHG brand guidelines.
Support the planning and organization of successful Food & Beverage promotions and activities within the hotel and, when required, overseas.
Participate in the preparation of the hotel’s revenue plan and marketing programs.
Monitor local competitors and benchmark their Food & Beverage operations against the hotel’s performance.
Stay updated on industry trends, systems, best practices, and equipment through trade publications, exhibitions, and site visits.
Conduct daily briefings, Food & Beverage meetings, and other operational meetings as required to achieve optimal results.
Attend and actively participate in other meetings as scheduled in the administrative calendar.
Assist the Manager in maintaining updated hotel policies and procedures, as well as proper documentation on all Food & Beverage matters.
Assist in setting Food & Beverage goals and developing related strategies, procedures, and policies.
Support the establishment of minimum and maximum stock levels for all food, beverage, materials, and equipment.
Assist in setting purchasing standards for food, beverages, and equipment in accordance with IHG guidelines.
Work with the Manager on manpower planning and workforce management.
Assist in the preparation and management of the department’s annual budget.
Perform related duties and special projects as assigned by management.
