About the Role

As the Food & Beverage Manager, you will oversee all aspects of the hotel's food and beverage operations, including Moxy Bar and Kitchen, Little Baxter, Pick Up’s and 5 conference and events spaces. You will lead, inspire, and develop a dedicated team while ensuring operational excellence, profitability, and exceptional guest satisfaction.

Reporting to the Operations Manager, you will play a key role in shaping the guest experience and driving the commercial success of our F&B offering.

Key Responsibilities

  • Lead the daily operations of all food and beverage outlets.

  • Create a vibrant, guest-focused atmosphere aligned with the Moxy brand.

  • Recruit, train, coach, and develop a high-performing F&B team.

  • Drive revenue growth through innovative promotions, activations, and upselling initiatives.

  • Manage labour costs, rostering, and productivity targets.

  • Oversee stock control, purchasing, inventory management, and supplier relationships.

  • Maintain high standards of food safety, hygiene, and workplace health and safety compliance.

  • Monitor financial performance, prepare budgets, and achieve profitability goals.

  • Collaborate with Sales, Marketing, and Operations teams to maximise guest engagement and business opportunities.

  • Ensure Marriott brand standards are consistently delivered.

What we are looking for:

  • Proven experience in a Food & Beverage leadership role within a hotel or premium hospitality environment.

  • Strong understanding of restaurant, bar, and hotel F&B operations.

  • Demonstrated experience leading, coaching, and developing teams.

  • Exceptional guest service and relationship-building skills.

  • Strong financial and business management capabilities.

  • Excellent communication and problem-solving skills.

  • Knowledge of food safety regulations, liquor licensing requirements, and workplace health and safety standards.

  • Ability to thrive in a dynamic, fast-paced environment.

  • Flexibility to work a rotating roster, including evenings, weekends, and public holidays.
