About the Opportunity

We are seeking an experienced Food & Beverage Manager to lead and oversee all food and beverage operations across the property.

In this role, you will drive exceptional service standards, lead high-performing teams, and identify opportunities to grow revenue and elevate the guest experience. You will champion a paddock-to-plate philosophy that showcases the best of our region, working collaboratively with leaders across the resort - and with producers across the Goldfields — to deliver outstanding results. You will play a critical role in both day-to-day operations and strategic planning.

Key Responsibilities

Leadership & Team Development

  • Provide hands-on leadership to create a motivated, high-performing team environment
  • Lead, coach and develop team members, including training and succession planning
  • Monitor and manage team performance to deliver strong operational outcomes
  • Foster strong collaboration across departments to ensure seamless resort operations

Operational & Financial Management

  • Oversee daily F&B operations to ensure efficiency and service excellence
  • Contribute to business planning, budgeting, and financial performance
  • Identify growth opportunities and implement initiatives to drive revenue
  • Manage labour utilisation, costs and operational efficiencies
  • Deliver reporting, forecasting and continuous improvement initiatives

Service Excellence

  • Champion a member and guest-first culture across all outlets
  • Ensure service delivery meets RACV standards and enhances the guest experience
  • Partner with our Head Chef to craft seasonal, locally-sourced menus that celebrate regional produce and tell the story of the Goldfields
  • Handle customer feedback and resolve complex situations professionally

Local Collaboration & Growth

  • Build and nurture relationships with local suppliers, growers, winemakers and regional tourism partners to strengthen our community connection and supply chain
  • Identify opportunities to partner with regional producers and events to create signature dining experiences that draw guests to the region

Health, Safety & Compliance

  • Lead a safe and compliant work environment in line with RACV policies
  • Drive safety initiatives, training and incident prevention
  • Ensure all team members are equipped to perform their roles safely

About You

You are a passionate and commercially minded hospitality leader who thrives in fast-paced, guest-focused environments. Who is genuinely excited by the chance to put a region’s produce at the centre of the table.

What you’ll bring:

  • Extensive experience in a Food & Beverage leadership role, ideally within a resort or hotel environment
  • Strong financial and commercial acumen, including budgeting and forecasting
  • Proven ability to lead, coach, develop high-performing teams and HR practices
  • Exceptional communication skills and ability to build strong stakeholder relationships
  • A proactive approach to identifying opportunities and driving business growth
  • Strong knowledge of hospitality operations, service standards, and industry trends

Qualifications & Requirements

  • Responsible Service of Alcohol (RSA) Certificate (essential)
  • Relevant hospitality qualifications (desirable)
  • Flexibility to work across a 7-day roster, including weekends
  • Ability to travel occasionally between RACV properties
  • Successful completion of a police check
